If your doing commercial bread it's best you use iced water to make the outcome of the bread look very smooth and attractive, your yeast will still proof
I bake bread just for home consumption but I'm surprised that my bread always has the strong smell of raw yeast once it's out of the oven. What is the substitute for bread improver since it's not easily available in my country?

The moment the dough rises to an extent where it is touching the tip of the pan or touches the cover, then it is ok to bake
