I used store bought shredded cheese and it came out really good but i had to add little more milk to keep it runny and not kinda thick also my butter and flour didnt look like yours it was clumps but when i added milk i whisked it and turned up to high then to med high to get it to be the right consistency...best recipe so far all my others was a fail.
I think a fork will be alright as long as you don’t scrape the bottom or edges of your pot! The goal is to mix everything, not necessarily through a whisk

No, you make the roux first, add cream afterwards to create a béchamel and then add cheese to turn it into a mornay sauce. Nacho cheese dip is just a mornay sauce with cheddar.
