I love how Kush can be an incredibly chaotic figure, and then the second he goes into Teacher Mode he becomes 100% sincere and kind. It's incredible!

I love how pleased and excited Mike looked to have Kush set him up explain the way he makes roasties.
If you initially cook the tatties in a flavourful stock (I think Barry even did this in a Chef V Normal battle?) it really adds to the flavour of the final roast potato.

It's so nice to see Father Kushmas doing his job while explaining what he does. Usually he's a little chaos gremlin and his chaos undermines the value of what he's saying. That's why I love videos where Kush is just doing his stuff at a a leisurely pace.

Yea, this was fabulous and gave me lots of ideas for Christmas dinner! I'll be roasting half a piglet (we're only 3 people, so even that is too much), but those sides are phenomenal!
You know, seeing how much butter Kush used in this video reminded me of a saying I heard a while ago. "A chef is someone who isn't afraid of using more butter than you" 😂

Best line goes to Kush: They (lentils) get in all those little nooks and crannies in your stomach where potato can't get. Had to go back and listen to that 3x. It was excellent. As were all those sides and as Mike said, you pick the ones your gathering would like, and it just adds to the festivities. Well done.

I love Kush in the kitchen because the ingredients just never end. Everything is par for the course and he makes it work because of his culinary sorcery.

I have never wanted to spend time with anyone at Christmas as much as Kush, you can tell how much food means to him, how happy he was giving the food to the boys was such a genuine moment.
Also, that roast potato method is what I've used since finding it, it will genuinely kick any other method away.
I appreciate how much of a proponent Kush is of using store-bought, pre-cooked, and ready-made ingredients where there really isn’t a significant difference in quality as compared to homemade ingredients

Kush is the crazy lovechild of a Delia Smith cookbook & Heston Blumenthal's imagination (with a little Salvador Dali thrown into the mix). Really enjoyed this & would love it to be made a series. Those onions & mushrooms 🧑🍳👌. In season I forage a lot of ceps/penny buns. If there's a mast year & I get a lot, I dry off the glut for usage throughout the year. Some once they're dry I'll turn into a powder, it's great for adding an umami, mushroomy hit to stews, champignon tartes/galettes, sprinkled on eggs or bacon...etc. Brilliant episode.
Something my grandmother taught me when cooking mushrooms is always add some carraway seeds. Not only for the flavour but also to help with digestion.
And lentils are part of a traditional eastern German "Neunerlei" or "Neinerlaa" which is traditionally served on christmas eve. Basically nine different dishes, all of which have a different meaning.
My grandma adds caraway seeds to cabbage dishes (especially to Sauerkraut) for the same reason.
I have to say, Kush’s video on butter beans carbonara made it be my go to side dish for special occasions

It is so nice to follow the stages of how Kush becomes more and more comfortable in the studio. All of these side dishes looked amazing, especially tha mushroooms, I will definitely try them very soon!
Love the questions from Mike and Baz for Kush (though I'm sure they already know the answers) but it helps those of us that might not know the 'hows' and 'whys', the subtleties of cooking, especially something we havent tried yet.
Kush is an excellent teacher as well.

Kush is a fun oddball guy, and damn does he radiate the passion and knowledge - his skillset really shows in how he is explaining things, very efficiently and straight to the point and still easy to understand.

Handy hint if you want to save oven space you can combine Yorkshire puddings and kilted sausages (pigs in blankets) and make a well dressed Toad in the hole.

I would love to see a return of the "Dream Menu" series, but with the boys trying to make the chefs dream menus. Would be awesome to see how far the boys have come and how they can adjust a full meal to the chefs palette!
I love Kush so much. He brings so much to the channel, genuinely helpful tips and tricks, personality, and accessability in the way he walks you through what he's doing. I would watch insanely long videos of him in the kitchen cooking and explaining his thought process. Like the 10 min burger challenge, but give him the full 10 min and see what he comes up with. No time constraints. Just kush being fully kush.
My respect for Sorted in general and Ben & Kush in particular is up there on par with any professional chef I've ever watched and learned from on tv/TH-cam.

I'm excited to try those potatoes, but i'm curious, how well do leftovers store/reheat? Loved this format, the only downside for me is that in each revipe, Kush used some type of uncommon ingredient. Generally, i dont have veal jus, goose fat or fancy cheese in my fridge. Lol. I love that he said you could use vegetable oil in the potatoes. Thanks, Kush!

4:34 How is it that you know the specific variety of potato? In the US, we get Russets (no specifics), red potatoes (no information), Yukon Gold, and mixed colors for minis and fingerlings. We are almost never privy to specific information about the varietal…ever. Most Americans would not even care-I do.🤗🤗🤗
Isn't Russet a specific variety of potato?
Where I live, we just have "potato" - nobody (except the farmers, presumably) knows what variety/type it is. It's just sold as 'potato' and comes in a single colour (brownish gold) and two sizes ('baby' or new potatoes when it's in season, and fully matured ones all year 'round). It kinda blew my mind when TH-cam told me that _potatoes_ can taste different/have variations!
Potatoes are sold by variety in the UK.
