Not difficult mate. Buy MIDI music keyboards and plug into your computer. Pedals are tricky but with the number of organs being scrapped you could find a 25 note fairly easily. If it doesn't have its own contacts fit microswitches. Open Source software available eg jOrgan is good.
I love how you use the Novation Launchpad not only to bypass the stoptabs completely, but to be able to add many more stops than this console originally was setup for. In any of your videos, there aren't any stoptabs tilted down to activate them, but that color touchscreen just about replaces these. The Wangerin Weickart Console was most likely a pipe organ console and not either an analog or digital electronic organ console? However, with your customization, so much more is possible than if it were a true pipe organ that is being played from the console now.

This console did control a pipe organ at one point, the stop tabs are not wired to anything at the moment

The stops currently are not wired to anything, I’m hoping to collect enough modern Stop Action Magnets to have them all functional
