Thanks for this. May I suggest you add a smoke tube for when you cook salmon. At 350 you’re not really smoking the salmon much and a smoke tube will definitely help with that.
There are many ways to smoke things. The pellets provided a smoke taste to it. Yes, it's not cold smoked with a pellicle on it, but there are many ways to smoke salmon. This is our version. Thanks for the support.

We suggest 275-350 but keep an eye out on the tenderness/doneness.

I fail to see how this is smoked salmon. Plus you did not rinse off the brine or let it dry afterwards for a true smoking of salmon.
