Originally, the RED colour is a result of mixture between acid (bicarbonate soda and buttermilk) and substance in cocoa powder called ANTHOCYANIN. BUT, nowadays cocoa powder undergoes DUTCH PROCESS which makes Anthocyanin COLOURLESS. So, that’s the reason why red colouring is needed. You can use NATURAL/NON-DUTCH processed COCOA POWDER to bring out natural red colour. However, if you want to enhance the colour, u still have to add a tiny bit of additional red colouring (e.g. red food colouring, beet juice, or red rice flour).
I just love the fact that you turn off the sound when using the electric mixer thank you so much for that because the loud noise out of nowhere always scares me so much 😊.
I made these yesterday and they are DELICIOUS! Super easy to make and everyone loved them! The cupcake itself is soft and flavorful and the cream on top is airy and a little bit sour, which compliments the cake perfectly! Definetely gonna make these again!
@@shwethazacharias4641 If you have a muffin pan (which is a little bigger than a cupcake pan) it will give you 6 cupcakes. I had a cupcake pan so I made 8 smaller ones. Hope this helped!

I tried to make this recipe today and it turned out very very yummy!!! By far the best red velvet cream cheese I’ve ever had! The texture of the cake is just nice! It’s the balance between spongy and moist! 🥰🥰🥰 I did make some adjustment though but for the preference of taste only (like reduce sugar and add more cream cheese & lime juice to the topping.) Thank you for such a wonderful recipe. My husband and I enjoy it so much! ✨✨💓💓💓💓💓💓
@@roeya5058 well, it’s sort of halfway between a chocolate and vanilla/white/yellow cake, which I like because it’s the best of both worlds. Plus it’s always so tender due to the acidity of the buttermilk (or here, the lemon juice + milk) which is kind of particular to red velvet. ❤️

I made the cake batter! They were light and not too sweet. Because they are not too sweet and not that flavorful (though my mother disagrees with me on this), I think they taste good with frosting.

lo que pasa es que el cacao reseca mucho las masas a la hora de hornearlas, entonces lo que permite que el bizcocho quede más blandito y esponjoso es justamente el efecto de la leche cortada
