    I've had nettle soup before but found the recipe a bit 'green' for me. The wild garlic, spuds & celery would balance it out quite nice nicely though. I think id'd go for a decent bit of butter in there along with parley & a good dose of pepper & nutmeg. Love it that you put these recipes up - there's no point in being able to forage if you don't know what to do with it afterwards. Cheers!

      I make a vegan version with coconut milk and lemongrass using porcini stock, might be more to your taste. I personally love using cream and chicken bone broth but the family contains vegans so I generally opt for the former.

      Yes I add mushroom stock too if I have any dried mushrooms left over from autumn 😋

    Ramson + nettles + sorrel + roasted chestnuts + acorn oil = my favourite wild pesto

      I like putting homemade oat milk in soup - ramps up the creaminess. And seeing all the nettles shoot up in my garden has me getting ready some good soup!

    Still impressed at your grasping nettles with no gloves. I tried picking a few from underneath like you advised in another video. Still stung my thumb! 👍

      Yes it still happens sometimes but I think you build up a tolerance :)

    I make a nettle soup with a milk based stock, which is really tasty. But I will definitely try this recipe for times when milk might be in short supply 👍

    If you want to keep it vegan you can use cream of coconut, olive or other oils or non-animal spreads for added creaminess - you don't have to "just leave it out".

      So true!
      I think cashew/almond butter or sunflower/hempseed/pumpkinseed butter would be nice too.
      Adds a lot nutritional value too, along with increased creaminess.

      Great thanks, glad you enjoyed it. I like to use this as a base recipe and add other things to it. A mushroom stock from any dried mushrooms left over is a great addition

      Just watched your bee video. Bees swarm when their colony is getting too big for the hive. They breed new queens, split up the colony and start a new hive somewere else. If a swarm lands in an unconvenient place you can always call your local beekeepers club. They love a free swarm and are happy to remove the bees for you.

      Yes nettle crisps are lovely. I also like Ray Mears’ way of just holding a stem of nettles over an open fire and crisping them up 😋

      @@UKWILDCRAFTS I did make that soup and it was superb. Very creamy in taste even though I did not add cream. I added normal garlic as I am still unsure of wild garlic. I also ate some cows parsley which was adequately described by yourself. I double checked on the Fools Parsley that you also deliberate on your website. Thank you again Lewis, I am learning a lot from your channel/website!

    Interesting! The wild garlic is getting there where i am. Not sure if this is countrywide but not a great year for wild garlic in my woodland gathering spot

    That's funny Lewis. I got a big bucket of wild Garlic and another bucket of young nettles. I use the nettles like spinach and for tea. The garlic as salad leaves. Have you covered Comfrey in any of your videos. I can't find it anywhere. I want to make a paste for my joints and bones

    Thanks for the inspiration, this looks great! I have cooked with wild garlic I foraged myself before (incorporated it into a lasagne, maybe not the ideal way to use it but I enjoyed it!), but have to admit still being a bit apprehensive about the nettles! More that I'll get stung when picking them rather than any concern about the eating part.

      If you're worried about getting stung by nettles you can try wearing rubber kitchen gloves while picking and cleaning. Works like a charm.
      Getting stung by nettles does have health benefits though. It can help with artritis and inflammatory joint pain, both preventative and to reduce inflammation and pain.

      With due care stings should be entirely avoidable, I just accept that they come with the territory and make little effort to protect my skin. They can help improve your pain tolerance without risk of serious damage.

      In wet countries nettles should be compulsory
      .. because they're anti- arthritic, read in book a dog couldn't walk any longer due to joint damage from arthritis and after 3 weeks of eating/ drinking nettle recipes, dog could walk again😀

    At 1:33, is that an arum lily leaf in the wild garlic pile? It looks suspiciously double pointed. I'll try your recipe soon, I checked the local garlic patch about a week ago and not a trace, it's been cold in North Oxfordshire, my cabbage tree is suffering.

      Hey Steve definitely no arums, I checked each leaf. I think I see where you’re looking, if you look carefully it’s actually two overlapping wild garlic leaves. It looks like it’s two lobes, also the ends of the leaves are sharply pointed whereas arums would have rounded lobes

      Grasping the nettles firmly ‘usually’ stops you from being stung haha. Also when I’m cooking with them, they were picked the previous day so the stinging hairs have mostly wilted. I got slightly stung but I think I’m mostly immune to it now :)

    I think one could enhance the umami flavour of the soup by adding mushroom ketchup or dried seaweed.
