    Interesting to hear people ate it before battle. I heard recently that those wounded in battle would sometimes be fed strong onion soup as it could be used to indicate a perforation in the digestive system.

    Hi guys, do you wash the wild garlic before preparing the pesto? And if so, how does one get it dry?
    I also heard one can blanch the wild garlic (pouring over some hot water and draining it immediately) to make the garlic flavor less intense. But then they are soaked. Is it ok to use the wild garlic like this in the pesto? It might not keep as long in the fridge, or?

      Yes make sure to wash it thoroughly and pat dry with a tea towel :)

    Ye had chefy fella on years ago from Galway I think that got wild flower garlic buds and was it fermented or pickled them. That I kept meaning to try. I made wild garlic pesto years ago, shur it must be a good 10 years ago now. I was heavy on the oil and it made me gag. I couldn't even look at wild garlic or oil for a few years without feeling queezy. I got over that and just eat the leaves direct now or on a sandwich.
    I think the pesto might be nice on, dare I say, a pizza 😊

    Why do you use lemon juice since the original pesto sauce doesn't have it?
    I cannot find wild garlic around my area otherwise I would make pesto for sure 😀

    Please do not pull up the bulbs as the plants will not grow back and only take as much as you need :)

      Yes indeed. That’s why we suggest bringing a scissors with you when you go to harvest
