I dont know what rim protectors you're referring to. Rim inserts are typically used to keep epoxy from dripping inside your tumbler. You want to sand the outer edge of your rim to get a proper strong epoxy seal.

Curious. Why wouldn’t you tape of the top rim of the cup like you do the bottom?
It saves me time sanding and adding additional coats of epoxy to smooth the bottom rim.
