Do you just use dry buckwheat? I suppose it should be soaked first to make it digestible. I actually sprout mine and then dehydrate it if I'm making a crust.
I am going to try this for our Sunday night dessert. If I can get the kids to like a vegan dessert I will be very pleased. No luck yet on the tofu vegan choc mousse recipes I have made, although I love them... Hahahah... Will let you know how it goes.

I would, however, add some coconut oil to the layers in order to help it set more firmly and when cut, present a little bit more neatly. Can't wait to make it for a late Mother's day present!
I created this for mother's day, and my family loved it! I added some yogurt to the middle base and replaced the top base with a triple berry, (blue berry, blackberry and raspberry), mixture I blended together.

The great thing about raw vegan is that everything is really good carbs. I'm not vegan, I'm actually right now on a low carb diet. So I'm just eating chicken, fish, vegatables, fruits and seeds. But I got a mean sweet tooth and a lot of vegan, low carb desserts I saw used flour and were overall baked, which is a no no for me right now. So these kind of desserts just fell from heaven for me. Truly all excellent oils and carbs.
Hmm.. Cashews gives great whipped cream consistency to second cake layer.. But i think that you can change them with vegan soya youghurt or coconut cream and bananas..

Tofu chocolate mousse? That's like torture. Just use avocado, coconut cream, cacao powder, vanilla essence and maple syrup.
