Once in my university years my roommate and I had no money and we were hungry. All we had in the fridge was a huge piece of yellow Bulgarian cheese. We also had spaghetti and black pepper. My genius idea was to cook the spaghetti and then immediately put the cheese and stir so the cheese can melt and become something like a sauce. Then I added plenty of black pepper. It was weird but super delicious. Didn't even think that I was actually cooking a traditional Italian meal 😂
Do you allow the pasta to cool at all before adding the cheese? I tried it exactly this way and my cheese got clumpy, perhaps because the past and water were still too hot?
Hey, Daniel! 1) Cook the pasta to your desired doneness, leaving enough water in the pan/pot to make the sauce. 2) Kill the heat and add the (finely grated) Parmesan/Pecorino. 3) Stir vigorously for a minuet and if you find that the cheese hasn't melted into the sauce completely, turn the heat back on medium and stir till you achieve a smooth sauce. why are you cooking with plateing tweezers would tongs not work
Absolutely, Thomas! Tongs would work great, but I didn’t have a pair handy. The tweezers are actually quite good for grabbing individual noodles. :)
