We've got a apple orchard in town I'm so going to give this a go, when covid hit I bought my presto canner and a water bath canner plus jars but haven't done anything with them, I will give it a go soon, thanks for the inspiration 😊
Love to see Aussie canners, love your channel. Have you looked at Aussie mushroom supplies for your jars they also sell in bulk. Another one I have found is Oz farmer. I haven't purchased any jars as I'm not brave enough to try canning yet, maybe one day.
When buying spices, check out the ethnic stores. They also sell larger sizes because of higher % of home cooking and limited flavor profiles. I'm in U.S.A., and I buy at US FOODS, which is open to public, Amazon, Walmart. Asian stores. Whenever I am somewhere shopping, I check the prices online. 😊
My secret for never running out of homemade vanilla is:. I use 2 quart jars, and put appx 8-10 split vanilla beans in each jar. I fill the jar with either vodka or spiced rum. (Lately, I've liked the flavor of spiced rum vanilla.). I put the jars in a cool dark place, that I will remember to shake every day, for a couple weeks, then 1-2 times a week. Then I let it set for 8 months to 1 year, for really flavorful vanilla. When it's ready to use, I put 1 quart in the front, and use vanilla from that quart, until 1/3-1/2 is gone. I then refill the jar with spiced rum, and put it behind the 2nd jar, and only take vanilla from that 2nd jar, until it is about 1/3 gone, (give some away as gifts, if desired!)repeat the process, and add more split vanilla beans, leaving the original beans in the jars, for extra flavor, or take a few out, to flavor a baked dessert, if desired.
Really enjoyed your presentation. I can apples cheap at nearby orchard. Vanilla beans - a different story, super expensive at supermarket. Have been thinking of buying online but not sure of quality. Any recommendations?
Agreed! Vanilla beans are super expensive and that why I reuse mine as many times as I can. I purchase mine online- the supermarket is just way too expensive. Amazon and eBay seem to be ok.

Use the cinnamon! It's so tasty in any pastry. You'll love it. You only need a little bit of a stick to flavor it, just like the vanilla bean pod. 😁❤

Yes - not so much a ‘section’ but each recipe tells you to either water bath or pressure can depending on what the recipe is… it’s a really great book

I have a video on making vanilla essence using rum or vodka. :)
What’s the difference between adding hot syrup to cold jars or pouring boiling water in same thing as far as I can see is there some reason
I do it this way so that if my jar breaks, I only have a mess of hot water and not wasting my syrup or fruit..
Not done waterbath yet. But i have done steam canning pineapple a couple of times. Would you see any reason not to do it the steam canning method.
I haven’t tried steam canning- from what I understand though it is equivalent to water bath canning. So I would give it a go :)
