Can I use mascarpone only as cream cheese? Or is it better one as philadelphia for example? Last time I made your aaaaamazing strawberry roll my husband said it is great but too salty for his taste because of the cream cheese (I used classic Philadelphia). What brand ( Europe) or type is best? Is mascarpone also good or even better or a mix of both?

This is typical to spanish tradition repostery. Called brazo de gitano, is ancestral andalusían sweet, other similar sweet, is Granada pionono.
