  • You can make a perfect homemade heavy cream with just 2 ingredients - milk and butter - and a whisk. This substitute will not whip into whipping cream like store-bought heavy cream, but is an excellent replacement for heavy cream in most recipes.

    For those who failed and it clumped up like a junk of yogurt try this. I failed twice and realized the temp have everything to do with it. The butter has to be warm, not too hot and the MILK has to be room temp. I put the milk in a really warm glass measure cup and heat it up for a couple second. It works the third times for me.

    Guys if the butter is seperating from the milk,just keep whisking,it will thicken up! The reason that its not thickening up because its still warm, even if its just a tad bit warm, it will not thicken up, so you'll have to let it completely coold down. If its still warm , put it in the fridge for some minutes, keep checking on it tho, unless it will harden!
    another thing, if you're planning to make things such as caramel sauce or anything that involves cooking it(not baking), i recommend using sour cream mixed with water until it has a heavy cream consistency.

      I tried em, but it’s still liquid. I was planning to make ice cream using this cream method originally, but since i don’t wanna waste the butter and milk mixture, i tried to blend it with banana since i want to make banana ice cream, but it worked, maybe because the help of the banana

    Theres an easier substitute for heavy cream!
    Sourcream works amazingly! Just mix sour cream with water or milk untill it has a heavy cream consistency. Dont worry about The tangy flavor, you cant really taste it, but the smell of milk and butter is very rich. This can be a subtitute for heavy cream in most recipes, such as cakes, sauces, etc.
    Since the recipe in the video cant be used to make certain things such as caramel sauce.

      This will not work on "any" recipe, it may work on some recipes in a pinch but it will not work on coffees, alfredo sauce and many other things. Could you imagine a sour taste in your coffee/alfredo? yuck. questionable advice at best.

      @@Alquerian Well, just use common sense, in what food or beverages would a pinch of sourness go or wouldn't go with?
      And as i've mentioned before, the tangy/sour flavor is barely there. But if you need to use heavy cream in larger quantities than other ingridients, then i suggest you should just buy heavy cream, or if possible, follow this video's tutorial.

      I don’t know if this may affect your recipes or not, I added a little bit of powder sugar to help it stick together. 8/10 it works but will need to use a hand mixer for about 5-10 minutes.

    Recommend not using microwave as it will heat the butter past it's smoke point in only couple seconds. Use stove top or oven instead. Don't heat butter past 160 C.

      Beta-carotene (pigment that makes butter yellow and carrots orange) is hidden by a white membrane in milk and therefore store-bought heavy cream. This beta-carotene is exposed when the butter is initially separated from milk, just mixing the butter into the milk will not hide the beta-carotene.

    Here’s a better way to do this do it on the stove and put the milk and butter in and desolve the water in the milk until it become thick than store it

      @@mauricewilliams3478 No, it will not. I saw another video on YT showing heating up both melted butter and milk in a sauce pan over very low heat. Stirring all the time. Do not let it boil. Note: The milk must not be cold when you add the melted butter in otherwise it will curdle. Stir continuously until you see steam coming up. Then you know you're ready for the next step. The next step is to put the mixture into a blender and blend it for about 5 mins. Pour the blended mixture into a container and let it cool down to room temperature before you cover container and store it in the fridge. Use the cream within 1 week.
      I didn't know making heavy cream is that simple. Most recipes call for heavy cream with 33% fat. Hence, 1/3 cup butter and 2/3 cup full cream milk. The better quality milk you use the better quality heavy cream you get. And the steam is to release the water from the mixture.

      @@michaela5053 It depends what the recipe calls for - room temp. heavy cream or cold heavy cream. If it's the former, wait till the mixture cools down to room temp. and if it's the latter, refrigerate it till is cold and then use it. I hope this helps.

    So I have lactaid whole milk do i need regular milk also unsalted butter is really expensive can i use margarine butter or do i need real butter.

    guys it works like keep on whisking and it will RANDOMLY thicken up!! like i gave up and was just whisking hopelessly and then all of a sudden it got thick and I thought I was delusional. 💀

    Didn’t work for me. Had to whisk for 10 mins then when it finally thickened a little bit I put it in the fridge. Not even 2 mins later it separated

      no, you need enough fat molecules in the milk. Heavy cream is a high fat product :/

    Mine would not thicken up. I whiped off and on for about 30 minutes but it just stayed super runny.
