The first time I tried the reverse sear method on a charcoal grill... I was blown away... You have got to try it. I have a simple weber grill, just stack all the coals on one side and you're good! You're setting up the grill to be an oven, a broiler and a bit of a smoker all in one.
My takeaway for my own needs: pan sear or deep fry if I have to cook indoors, skewer over open flame if camping, reverse sear if using my grill or smoker, and if I ever wanna level up I can learn to sous vide and buy a culinary torch for the crust. Awesome. Thank you, Guga!!
practice! i was never good at making steak but i picked up some tips from watching these videos and now I can make a restaurant style steak every time. there are some little tricks that u can do for example u need super high heat to get that nice sear without overcooking it.

Not only the woodsy smokey flavor and crust but it is the closest link and connection method of cooking to our early ancestors. I find turning frequently and rotating aids in limiting any burn spots.
In western North Dakota, they have Pitchfork Fondue. They actually use a pitchfork to skewer a steak & deep fry it in a huge cauldron of peanut oil. Delicious.

As soon as i got my smoker set up. I started using it as my oven. And the steaks ive been doing on it have been thr best ive done so far. Usually i do 250* till internal 130* Rest for 8-10minutes While resting i get the grill hot to put a nice sear on each side with some butter to get a nice flame sear about 1.5minutes a side to get that internal to just over 135 area.
"As you can see the Germans are shooting at us from their bunker, but I can fire up the flamethrower and fix that real quick. Now the Germans have a crust on them, they are juicy, so juicy."
Best steak I ever had...build a fire pit (or use that of a friends). Make a nice big fire with birch, ash, poplar, etc. fairly large pieces. Wait until the fire is out and all you have is white, glowing coals. Throw some sliced potatoes with butter, onions and double tinfoil direct on coals. Get a grate and place over coals. Cook steaks. When steaks look done, take off to rest in tinfoil "tent". Remove grate and gently flip spuds. Spuds should be done by the time you cut up the steaks (check with toothpick). Give 'er a try.
It's not very romantic, but "just keep flipping" has earned unprompted positive feedback from my family when grilling hot dogs and burgers as well. I ain't complaining. 👍

As soon as i got my smoker set up. I started using it as my oven. And the steaks ive been doing on it have been thr best ive done so far. Usually i do 250* till internal 130*
Rest for 8-10minutes
While resting i get the grill hot to put a nice sear on each side with some butter to get a nice flame sear about 1.5minutes a side to get that internal to just over 135 area.
If you think I'm gonna sit there and watch a 20 min video of a guy cooking steak...

Best steak I ever had...build a fire pit (or use that of a friends). Make a nice big fire with birch, ash, poplar, etc. fairly large pieces. Wait until the fire is out and all you have is white, glowing coals. Throw some sliced potatoes with butter, onions and double tinfoil direct on coals. Get a grate and place over coals. Cook steaks. When steaks look done, take off to rest in tinfoil "tent". Remove grate and gently flip spuds. Spuds should be done by the time you cut up the steaks (check with toothpick). Give 'er a try.
I must say, the "Just keep flipping" technique is awesome, I've got the most consistent results with it so far and my family loves it
