      I thicken stews and pasta sauces all the time with a bit of rice flour. You will need to experiment with the amount of rice flour needed for your recipes. I no longer keep cornflour in my pantry, as rice flour does an extremely good job at thickening. Stews and pasta dishes made with rice flour do not stick to the pot like other thickeners do. You need to stir the rice flour into the mixture as soon as your put it into the pot, or it will be lumpy. I have never needed to stir the rice flour into separate container and then add it to the pot. I put the rice flour straight into the pot. When using cornflour I always need to make the cornflour and liquid in a separate container and then add it to the cooking, as the mixture will lumpy if I do not do this.

    I have found that honeycrisp Apple's are the best for apple pies . They are like the perfect combination or sour tangy granny Smith's with the sweetness of red delicious. Not too tangy and not too sweet . And sooooo delicious.

    Not quite sure about apple pie without cinnamon and nutmeg... Im very attach to american recipes of apple pies.

      *Cinnamon and nutmeg are not American ingredients - they are South Asian. Apple pie is an English dish. That said, this isn't the most traditional recipe.*

      I grew up in an Irish household (first American in the family) and I always had it with ground clove... although, this sounds equally good.
      Apple pie just doesnt taste good to me with cinnamon. Worth a shot with Clove if you like that spice in it.

    I have never been fond of apple pie, I prefer fruit pies to be a bit tart. In fact the only apple pie I've ever really liked, was one that my grandma made using granny Smith apples, that she forgot to add the sugar in.

    the best apple pie I ever ate was made by an elderly lady. The crust was lattice. coated in butte and sugar and cinnamon.
    She kept the recipe a secret unfortunately.

    Flour works as well to thicken juice. Not as clear as corn starch. But tastes great

    Many recipes here call for ore cooking the apples before putting into pie for baking, BUT my grandmother Never did that, she taught me your way, and I find that the apple structure is far superiour and the taste is less like store bought/canned!
    yours is the first recipe that calls for fresh uncooked apples that I have found, so far! Having 10 apple trees on our farm, my grandmother knew her stuff! 🍎

      Yes I was gonna cook my apples before baking as well. Just wasn't sure pie would turn out at all with uncooked apples pieces but sure thing it turned out just so great. And it has a crunch to the apples. Fantastic. And the pastry is just so yummy.
      This recipe is a definite keeper.

    I love apple pie! But sadly I don't have an oven so I always make in the microwave. But it actually tastes good, though the texture of the pastry is off a bit

    If you are allergic to corn starch, you can substitute flour to thicken your pie.

    Hi Gemma, I'm awfully picky when it comes to apple tart here in Ireland my local petrol station does to me "amazing" apple tart but it's not the apple that's the star for me it's the pastry as to me it's got a little chew to it so I think anyway and it holds it shape really well when cut. I'm wondering if this pastry of your sowuld be the same visually it looks like it. Regardless I'm still going to try this pastry recipe but thought I'd leave this message and see what you think.

    I’m surprised the crust isn’t blind baked? Does it not go soggy?

      No, it doesn't if baked under the right conditions.
      Pastry like a hot oven. 180C is a good hot oven. If your oven is behaving properly then that should bake it well ni the time. If not then turn it up a tad, about 190C/380F should do it, then keep an eye on it. A preheated oven will bake faster too- get the oven nice and hot, pastry likes a shock of heat to set it up.
      Time too - bake a little longer - and the pie dish you use can affect this too. A metal pie dish transmits the heat better than ceramic and glass. The advantage of oven glassware is that you can see how it is baking through the process.
      I hope this helps.

    Can you freeze the pie before and/or after baking?

      Yes you may freeze the pie before baking. Some pie pans freeze better (metal preferred). And you will need to place the pie inside a plastic bag to prevent it from drying out and freezer burn. The same goes when freezing a baked pie. Make sure the filling is cooled and set and then cover in plastic bag before chucking into the freezer :)

    That looks so stunning! Would it be ok to sub the vanilla bean for vanilla bean paste? What about using some cinnamon and maybe a pinch of fresh nutmeg? Could we also sprinkle the top with raw sugar after the egg wash?

      You could sub vanilla bean with the paste. It will have a stronger, more concentrated vanilla flavor, so you can scale back a bit. My recipe doesn't have cinnamon or nutmeg, but you can certainly add some.
      And yes to raw sugar for crunch if you'd like :)

    Hi Gemma! I've been having troubles with your crust recipe... I did what you suggested (add 2 tablespoon of water little by little) still it tends to "crumble" a lot... If I add water, it gets sticky, and then IMMEDIATELY AFTER THAT it goes back to crumbly.. any suggestions?

      @@biggerbolderbaking I think I followed it maybe a bit too much to the letter: when I read 2 tablespoons I made them to be literally 2 tablespoons which was maybe not enough. Well, no problem: the flavour is wow, I'll try again to improve the crust ;) Thanks!!

    How would a glass pie pan work for this? Also someone in my family boils there apples why would they do that?

      Yes a glass pie pan will work :) No reason it should not. And did you ask them why they did? Some bakers cook their pie fillings instead of baking them straight up. A different stroke for different folks :)

    Really enjoyed this video however I found the cut out look really strange. Will make it with just a plain top.

      The little apple holes help the steam escape and cook the apples. The apple cut outs are a nice festive seasonal touch :) But you can most certainly make a plain top

    Can i use a glass dish I've heard it doesn't work out since glass is a poor conductor

      Glass pie dish would also work :) Just make sure to pre-heat your oven well BEFORE placing the dish inside the oven

    I prefer to thinly slice the apples rather than leave them in chunks because it's more melt in the mouth that way.

    general question: Gemma is your oven convection or convention? Mine is convection (fan forced) so wondering if I need to make adjustments to the temp for making cakes ? Been so in love with your recipes.

      My oven is a convection oven, but will tell you in the recipe if you will need the fan :)

      My crust doesn't need blind baking. You can give it a go and find that it's really simple to make.

    I made said apple pie on the weekend and it turned out just so yummy. I did place a little cinnamon through the apples. Turned out fantastic. I must commend you on that pastry. I followed the instructions and did not let my butter melt down completely. Was just not sure if it would turn out but it did and it is just so very delicious. Thank you so much for the recipe.       The pie came out of the oven and looked just ever so delicious. But when I cut into the slice the bottom pastry was soggy.
      😮 I'm devadtated. I looked on the internet and seems I needed to prebake the shell. Any comments? Please help me. 😢

      You can try substituting the all purpose flour with gluten free all purpose flour :)

      Yes, you can. Sugar also helps to thicken it up by caramelizing. Hope it turns out well for you!

    Hi gemma I did make an apple pie this lockdown.. Since I've never tasted an apple pie before so far ive tasted only apple crumble pie... But I was confused whether the crust needs to be flaky or cookie type?

      Classically, it's flaky but you can also use cookie base,. Both taste great!
