I have and 3/8 waterline running from the faucet, so i supose to attach that to the 3/8 x3/8x1/4 tee to ice maker line and the shark bite thats already on water supply?

I have a plastic saddle thingy so would I have to replace the whole set of lines?
Yes. That’s what I had to do. That plastic is terrible for leaks.

I would add a separate shutoff on the tee for the line to the fridge
