I wanna try the game, but don‘t quite understand. What would happen when you build your village to a certain level? War between villages?

Nice to hear that you like the game!
It depends on your game mode, you can either choose to build only or you play with bandits and other lords and have to fight those from time to time. But you have plenty of time in the beginning to set up a good economy first ;)
