This is simple and gets the job done. No need to over complicate things with the two zone grill and aluminum foil and the extra stuff people do. Over low direct heat is all it takes
That’s how I cook ribs on a egg grill except I find when they get to 190+ they get a bit dry especially on the thinner side I go around 180+ before the rest
I’ve been back on the grill vs smoked ribs lately. The seasoning taste better then I just put them in the oven while I cook the rest of the food and by time I’m ready to eat those ribs fall off the bone with a little crispy grill layer on top
