Thanks Rik, reminds me if my mum she was always baking. It was cheaper than buying things. She used to make biscuits and tater pie in a big brown dish and apple pie and custard for afters. Any pastry left she used to make a fatty cake as she called it. Thanks for the memories Rik xx
Think it was the 1st thing they let us help make as kids.. lemon curd for me always.. allergic to other fruit.. but, I’d choose lemon anything as always the best flavour 😊I tend to use icing sugar for most recipes.. as not a great sweet tooth n it’s jus on right side of a bit to suit everyone 😂

Perfect pieces of heaven Rik ☺️🙌🏼. I mainly use a fruit spread and add a smidgen of extra fruit spread (or jam if using jam) to the tarts on removal from oven, this adds a quite lovely colour and freshness to the tart. 😃
This was a summer staple at my grandma's house. Little tarts with homemade strawberry jam filling. She used to keep them in freezer so they icy cold and perfect for hot summer days.

When I learnt to make jam tarts there was no such things as “baking beans” so I was taught to prick bottom of the tarts with a fork before the jam was put in. And jam, even bought jam, was runny in those days. What we get today in jars is nothing like then! My gripe is that it goes off so quickly, something unheard of back in the day. Anyway your tarts looked really lip licking yummy!!

If more people cooked simple food from scratch their money would go a lot further in these economic difficulties. My parents were not wealthy but mum always made a nourishing meals. But then she went through the 2nd word war with rations.😊
You know my favourite flavour is lemon. Because it is 1 am in the morning, all I can do is make lemonade. Cane sugar dissolved in hot water, tons of freshly squeezed lemon juice (mouth watering), honey if needed and ice water. The making of tarts will be tomorrow morning.
