Scrap the fat under the skin and discard. 2 Take the washed and drained chicken skin and marinate it with salt, fish sauce, seasoning powder, pepper, coriander root powder, and garlic powder. If you don't have it, you can use the pounded sausage yourself. Mix together the chicken skin. Set aside in the refrigerator for 30 minutes. 3 Remove the chicken skin from the refrigerator. Fill with cold water. and crispy fried flour mixed together If the batter is thick, add water. Because the batter must be watery, not too thick. Put a lot of oil into the pan, use medium to low heat. Set until the oil starts to get hot. Add chicken skin evenly. Use a spatula to scrape the chicken skin so it doesn't stick together. Fry until the chicken skin is firm, stirring continuously. 5 When the chicken skin starts to turn yellow Turn up the fire. Fry the chicken skin until it is golden all over.
