什么是无水奶油
看見人人都做的很美,請教一下,我做的有點破酥,首先1)油酥很沾手,不成團,難以分成等份,是正常嗎?因為太沾手,我無法控制,我就加了多點粉,也不是加太多我想,最後也有點沾手的,但較好控制
2)油皮是軟,那油酥是要那個程度呢?油皮要搓至有薄膜嗎?做油皮如果太用力,會出筋/ 起筋嗎,會不好嗎?

油酥只用按圧方式成团,不能搓揉,只会越搓越沾手的
