I'm Guyanese American with Bajan great grandparents and Trini family too but Bajan fish cakes are THEE best! They are spongey, flavorful and crunchy, I just don't like that other islands add potatoes; it makes it heavy and changes the texture.Trinidad has some smooth Phlourie but Guyanese roti and dhalpuri is KING!

If anyone visits Barbados I highly recommend the fish cakes that are sold at the Animal Cave...so yummy!!!....I just got home from vacationing there. I must of ate 20 cakes
