Ok, and now time for some truth :
1) Cafe Coutume is totally has been , they opened shops everywhere and have mostly unqualified barista and average coffee
2) Cafe Loustic is a small, messy place which serves average coffee
3)Back in Black is a trendy place which serves good food. Coffee is just average however
4) Cafe Substance is indeed great, having very rare coffees and virtuoso barista but this comes with a high price
5) Ducasse brings absolutely nothing to the coffee scene. Coffee is good but prices way too high . The shop in Halles is quite ok (contrary to the one who closed in the 6th neighborhood)
For good coffee, besides Substance above, there is
a) l’arbre à café (the one rue du Nil) : incredible choice and really good barista
b) café partisan : good to very good coffee (depending on the barista of the day), quite a cool place but crowded usually
c) Motors coffee : everchanging selection of coffee from roasters all over europe, passionate and qualified owner/barista
d) Terres de café (only the one rue Saint Honoré) : friendly and really good baristas , picking the best from Terres de café coffee selection (which is uneven ...)

Où est la caféotheque dans tout cela??? Les pionniers du secteur, le café est fantastique et l'endroit est très original. Le staff raconte le café à perfection. Ils auraient dû être dans ce reportage.
