    An economical meal my boys (son 21 & nephew 20 who live with us) love is leftover pizza. I make pizza dough with Italian herbs, then top with leftover cooked meat (roast lamb this week) and added bits of veg from the fridge. Mr21 has a smokey bbq sauce for his half of the base and Mr20 has tomato paste.

    I love the idea of adding oatmeal to pancakes! We are having a blizzard at the moment.... that recipes sounds like a perfect breakfast for tomorrow before shovelling out in the morning

      We really like making pancakes with the banana & oats - it's probably our favourite. If you give it a go, I'd love to hear what you think. Hope the snow doesn't cause too many problems for you!

      @@NikkiBeal I made your oatmeal pancakes over the weekend, I substitued frozen blueberries for the bananas because that is what I had in my freezer (am fortunate to have a few freinds who have blueberry bushes and give me heaps of them every summer). I love the addition of the oats, delicious! Thanks for the inspiration.

      I've become a big fan of shredding chicken rather than just dicing it, it makes a little go a long way (which is handy sometimes as meat is so expensive!)

    I have recently discovered your channel and really love your videos. As a fellow Aussie I really like the fact that I have access to the items you mention.
    I have recently moved out and am on a budget and I am new to cooking. Would love meals/ videos on budget/ easy meals you might have cooked/ continue to cook when you were on a budget and /or feeding yourself.

    I really loved this video. So many different ways to use the same items over a few days. I’m definitely going to try a few of your ideas over the next week. I’m thinking about adding some chocolate protein powder to my overnight oats.

      Thanks for watching! We love adding a little protein powder to our overnight oats - the extra protein and the low GI carbs usually means we don't snack in the morning before lunch. Also, who doesn't like eating chocolate for breakfast?!!

    Love how you make the most out of everything you have. You got some real good Mark downs on some meat there. My Coles and woolies now have a “best before” date on their meat instead of the previous “use before” date and as such they only mark down 50% at the very end of the day of the best before date and if it’s the morning of the best before date they’ll only mark down around 30-40%).

      @@NikkiBeal Can I ask when you get your meat on a really good markdown 50% say, how long is it within the best before date (day prior, on the date or day after date?).....hope you can understand what I’m on about 😂

      @@traceycosta9196 Usually it's 'Use By' is the day of purchase, sometimes (very rarely) it might be the day before if they have a lot to move. Generally we see it 40-50% off the morning of, and 80% off the evening of it's Use By date. But not always. Sometimes stuff is weird amounts off, like only 4% or 7% off, the day of Use By (I think they're trying to 'cash in' on the marked down stickers, hoping someone grabs them without really looking at how much is off).

    love your channel , thanks for sharing ( learned from a you tuber you can use the chicken fat in pie crust or dumplings ,also she saved her veggie end and skin with the chicken bones to make extra stock )

    Must admit I do like how you do pricing for Coles and Aldi (yet to see a video with woolies stock but I'm sure there would be one).
    Keen to try the over night oats idea! We're a family of currently 2A and 4C (5C in September).
    Never thought of adding oats to our pancakes.
    Where did you get your bags that you put the grapes in?
    Do you have any plans for videos gardening? Like time management of gardening and running a family.
    Keen to try the veggie bread as a side dish in meals for our family as a healthy boost.
    Loving the sneaky veggie cheesy pasta dish and the potato dish! Can't wait to try them all ready it would be something different for us. I'll send the link to my husband who normally starts dinner ( I finish work later than him) and ask him to start on the dishes.
    We don't have a pressure cooker, but do have pots and also a slow cooker. When it comes to stripping the chicken at the start (which still an epic buy, honestly great score), would the slow cooker all day whilst were all at work be best? As I know you want it to basically fall off the bone. But of medium for 10 hours or low for 11 hours do you think?

I tend to shop more at Coles and Aldi for the bulk of our shopping (I get better FlyBuys offers than Woolies offers), which is why you'll see more Coles / Aldi stuff & only the occasional Woolies marked downs videos (but I am looking at doing some of the grocery budget challenges specifically at Woolies). The little reuseable zip lock bags are from Aldi, but you can pick them up from lots of different places (Kmart has similarly priced ones), but they have been such a great investment. Slow cooking the chicken works perfectly, and was how I did it all the time before I got a pressure cooker... the only trick it being organized enough to get it on in the morning! LOL. We've been adding Sweet Chilli Sauce to the Sneaky Veggie Pasta (and grated cheese on top, if I didn't do that in the video ... I can't remember!) and it is amazing. Highly recommend that addition! Also, the cheesy veggie bread is the best! Let me know how you go!

    Really good video. I'm glad you had some real cheese for the mac and cheese. Vegan versions can be really tasty--I've used butternut squash in the past--but they need nutritional yeast to provide the cheesy flavour.

      We've done this recipe again, but added sweet chili sauce to the vegan cheese sauce, and it works well. We're not vegan or vegetarian (so I don't tend to have things like nutritional yeast on hand), but I do like to find ways to get extra veggies in, and this works well. But yeah, this dish benefits from a little grated cheese grilled on top!

    The pancakes look so amazing! How long did you cook them for and on high or medium heat ect? Sorry if you said it i was quietly listening with kids asleep 😅❤

      I usually cook pancakes on a medium-ish heat, but they can be temperamental & it will depend on your stove top. You want to aim to have a golden brown bottom at the same time as the top heats through enough to seal it & develop a few bubble holes. That's the perfect time to flip. It's a fiddley science & I'm continually adjusting my heat knob! 🤣

    Can you tell me the measurements and ingredients for the veg cheese bread please it looks so good. Also the fritters recipe please. Sorry better for me if I read it

      The original recipe is from The Forked Spoon theforkedspoon.com/cheesy-zucchini-bread/ and it's fantastic. I subbed SR Flour for the plain flour, baking soda, & baking powder. Add 1 Tbsp of vinegar to 1 cup of milk to make a faux buttermilk (it helps with the rising). I also used both regular flour and GF flour and it works perfect either way.
      This fritter recipe from Just a Taste is pretty close to what I do (www.justataste.com/quick-and-crispy-vegetable-fritters-recipe/) only I use 1 egg and 1/2 cups of milk (saves on the eggs) and they turned out great.

    Good to get ideas but this is not enough food for my family of 5. I need 2 trays of lasagna or pasta bake to feed everybody and have a little bit left over if I'm lucky.

      Hi Kimberley! Typically I base how many eggs to use off the size of the dish I'm using. If it's a large baking dish, I'll use a full dozen, 6 in the small. Most of the time I don't use a recipe when I cook, but there are a bunch of great frittata recipes online. I chuck in whatever fillings I'm using, cover with beaten eggs, and bake in the oven until cooked through (stick a knife in the middle and see if it's still runny!) They always take longer than I think!
