    I started watching your videos from whichever one appeared in my TH-cam algorithm, and I couldn't stop watching the next, and the next, and the next. Since my knowledge about cakes was very basic, your videos introduced me so easily and smoothly to the deeper world of desserts. It feels like I was initially just playing by the beach, and gradually, I became interested in diving deep into the ocean, discovering the many types of creatures living in it. 😄 Thank you for willingly sharing such incredible knowledge about entremets!❤

    커버쳐를 템퍼링 을 하신건가요?
    아니면
    템퍼링 을 하지 않고 초코, 오일, 맛차 만 섞어서 얇게 밀어낸뒤 모양낸건가요??

      케이크에 덮는 초콜릿 코팅은 템퍼링을 하면 안되요!
      얇게 밀어낸 뒤 모양을 냈다는데 데코를 말씀하시는지요?

      정확한 보관방법을 잘 몰라 버리거나 했는데 초코코팅 후 남은 초코릿 은 밀봉후 실온보관 하시나요??

      케익왕 넵 초코코팅 실온보관 하시면 되는데 화이트 초콜릿 베이스 코팅인 경우 장시간 보관하시려면 16-18c 에서 보관하시면 됩니다.

    Hi there, hope you are fine. I was wondering after baking the cake do I freeze the cake immediately or do I need to let t cool down than freeze it, thanks.

      Hi. Freeze when its still warm for trapping the moisture in the cake.

    Q: how long time keep the cake in freezer after baking ? And not need to cool down in room temperature?

      3-4 hours. Freeze it right away for keeping the moisture in the cake. Do not cool it down

    안녕하세욤~~ 영상 엄청 잘보고 있구 엄청 도움이되고있어요~~
    근데 제가 피스타치오 가나슈 몽테를 만들고 하루 지난 후에 휘핑을 했는데 초반엔 너무 단단해서 계속 돌렸더니 크림법 분리나는 듯이 분리됬다가 합쳐지더라구요. 왜그런건가요?

      “크림법 분피 나듯이 분리됬다” 하고 하셨는데 무슨 말씀인지 잘 모르겠어요. 일단 단단하다는건 젤라틴의 양 때문인데 제가 보지 않아서 정확히 뭔지 모르겠어요 😅
      젤라틴의 강도 확인하고 쓰셨는지요? 젤라틴의 양을 맞췄다면 강도 수치가 높은걸 쓰신거 같아요.

    너무 맛있어보여서 꼭 만들어보고싶은데 저 틀 구하기가 쉽지않아서 혹시 실리코마트 큐브 5cm 짜리 몰드 사용해도 괜찮을까요??

      틀을 못구하신다면 큐브틀에 타공메트랑 팬 하나 올려서 굽고 가운데 구멍내서 하셔도 되요!

    작품이네요..!! 간소화해서 만들어 보구 싶은데요 선생님.. 식감은 촉촉한 스타일인가요 묵직한 스타일인가요?👀 화이트초콜릿 코팅을 맛차 대신 피스타치오 페이스트 넣는 걸로 바꾸려는데 오일을 꼭 넣어야할지, 오일을 넣는 이유가 무엇인지 궁금해요🙏🏻

      안녕하세요!
      케이크 레시피 자체는 엄청 촉촉한 식감이지만 뚜껑을 덮고 굽기 때문에 조금 묵직해집니다. 원래 케이크 식감을 원하실 경우 뚜껑을 열고 구우신 후 윗부분을 제과용 칼로 잘라내주시면 됩니다.
      말차 대신 피스타치오 페이스트를 써도 상관없습니다.
      말차는 케이크 전체의 밸런스에 뒷받침 역할을 해주는데 페이스트로 바꾸시게 되면 너무 피스타치오 맛만 나지 않을까 싶네요!
      오일을 초콜릿과 섞어주어야 케이크에 코팅 시켰을 때 우리가 먹을 때 입안에서 초콜릿이 부드럽게 휘감겨요.
      굳는 성질의 포화지방 만으로 이루어져 있는 초콜릿 (코코아 버터)로 만 코팅 시켰을 경우 코팅이 얇다 한들 딱딱하기 때문에 굳지 않는 불포화지방을 섞어 줌으로써 우리가 먹을 때의 식감을 부드럽게 만들어준답니다.
      피스타치오의 지방 자체가 불포화지방이긴 하지만 레시피에 필요한 총량의 오일을 채우기에는 턱없이 부족하기 때문에 오일을 추가하셔야 해요.
      (초콜릿 무게 10%에 달하는 오일만큼 맞추기 위해 페이스트를 넣는다고 가정하면 맛도 맛이거니와 코팅이 불가능할 정도로 질척해지겠죠!)

      오일을 넣지 않고 코코아 버터 (초콜릿) 로만 코팅을 하는 경우는 두 가지가 있어요.
      1. 스프레이 건으로 분사 코팅을 시켜야 하는 경우
      2. 모형이 변하지 않게끔 모양 유지를 시켜주기 위한 경우
      도움이 되었으면 하네요 ☺️
