    Pumpkin Paratha
    Ingredients
    Pumpkin - 500 Gms
    Wheat Flour - 4 Cups
    Salt - 1 Tsp
    Sugar - 2 Tsp
    Water
    Oil
    Ghee
    Method
    To a pot pour some water, add the chopped pumpkins and cook them till they are soft and mushy.
    Once done remove it from the pot and transfer it to a bowl.
    Mash the pieces nicely with a masher.
    To a bowl add four cups of wheat flour and add one cup of cooked and mashed pumpkin. To this add one tsp of salt and two tsp of sugar.
    Gently start kneading the dough.
    Gradually add water as and when required and prepare the dough.
    Apply little oil all over the dough and let it rest for 15 minutes.
    After 15 minutes, just dust the dough with the little bit of flour and mix again.
    Divide the dough into equal size balls.
    Gently spread the dough evenly.
    Apply some oil and roll the parathas in to one side and fold it.
    Just dust it with some flour and roll it out evenly.
    Heat a tawa, place the rolled-out parathas and flip it to the other side.
    Once done on both the sides, apply some ghee and remove it from the tawa.
    Soft and spongy pumpkin parathas are ready to be served with curd and pickle or any side dish of your choice.

    In Maharashtra, grated pumpkin is cooked and jaggery is added. Atta is added to this mixture upto a point where dough is of proper consistency to roll out Paratha. It's called gharga.

      Yes it's travel friendly and can be also be refrigerated or frozen for later use.
