I just watched this video. My question is what is the purpose of the figure of nine knot and what is this knot good for?

It unties slightly more easily than a fig8 after being put under load and is slightly stronger. It can be used as a rope rescue anchor knot to haul from as well as caving application. For climbing the 'tighter' fig8 may give more security.

when doing the double figure 8 bunny tail knot, why is it important to dress the loop you pass over above the other two loops at the top? I've seen people put it in the middle or bottom as well.
