Just a heads up, Buckwheat flour is often milled in things that milled wheat. It's notorious for CC. So, only use buckwheat flour that has a GF seal or some specific reference to being gluten free.

First off, great video! I like how you use the 'basic' ingredients that you can get most places (I'm in Europe myself) instead of a specific mix you can only get localy. The bread looks great, given me some motivation to bake it for my daughter. Only had horrible results in the past (bread that feels like cake). Don't forget (incase you didnt use it): use iodine salt, this is what's also used in regular bread so you get enough iodine. And a request: any chance you could try to make a sandwich bread? My 7 year old hates the crust on bread (don't ask me why), so a more squared loaf with a softer crust is what I'm trying to make. I checked out loopywhisk's recipe, maybe make a video about that one?
@@JayvsGluten I've tried so many recipes, with all of them having the mix turning out more like a very thick batter than a dough you can shape . This is (weirdly) also the first one where the psylium fibers have to be mixed with water before adding it to the dry ingredients, which makes so much sense when I think about it now.

You can, but the finished product will be a little more white bread-y and a little less artisan bread-y. The increased protein in the brown rice flour is important for this style of bread.

Sandwich bread is on the list! GF baking isn't that tough, but you do kinda have to forget almost everything you knew baking wheat/gluten bread.
