I am from Karnataka we regularly make idlis .This is Completely wrong method eno and curd are not used . It is better if you appoint any South Indian to teach these South Indian dishes
Lot’s of people use dahi and eno . I know for sure it’s not authentic. I soak urd dal Idli rice and Methi dana all separately over night then grind without water and then leave to foment 7/8 hours. Then mixture mix it with hands constantly to bring air in and then ready. No need for eno👌🏽 All recipes ok what ener suits whoever. 🤷🏻♀️

Soak separately 1 cup (same measure) of whole white urad dal and 1 tspn of methi seeds. Soak these for at least 5 hours. First grind urad-methi mixture with little water in a grinder.to a very smooth batter. Transfer to a utensil. Add rice and grind coarsely like rava. Add to the dal paste and mix well with your hands. Leave it to ferment overnite. Add salt and mix well and steam for 10-12 minutes only. Not more.
It is absolutely artificial method of making idli. I'm from Vijayawada, Andhra Pradesh so i know that the whole process she followed in making batter is very bad .we never add curd and eno in idli batter. It will spoil the authentic taste .

No need to add curd and eno as it is you ferment the batter for 8 hours.without eno idlis become soft fluffy.
