just out of curiosity, shouldn't we taste a proper taste note with a cup of espresso or black coffee instead of latte and the art?

That is a good point. So the best clarity personally can be shown through from a cupping method on the cupping table. That being said if you look at the WBC, milk based drinks are served too, and with each milk base drinks tasting notes with descriptive are given too. All that being said, certain coffee has unique characteristics in that it changes in taste when it's black and when it's in white.
Latte art is just a bonus if you can do it. It wasn't in our consideration when rating the lattes
