Excellent video, thanks for showcasing the different possibilities and results! Just a note: when you determine the number of encounters based on Site size, it's literally the number it says. So in your case with the Medium size you would have a maximum of 6. The reason for this is that you must always roll a D6 for the Encounter table (the one you slowly fill up) when in a medium sized Site.
