      Sadly, the one and only time I went to Philly (for business), all I knew or heard of were Pat's and Geno's. I didn't know anyone local. I wasn't impressed.
      Here in the South, what we call a "Philly Cheesesteak" is meat, grilled onions and bell peppers, and provolone cheese. Cheese whiz isn't something that goes on a sandwich. That goes on crackers or nachos if you're desperate.

    • @FlavorofMind
      @FlavorofMind 10 วันที่ผ่านมา +38

      Yes, crisis averted 😂 Pat's and Geno's just don't have it! I loved Angelo's, and have been meaning to try the steaks at John's Roast Pork for good measure...

      @alexanderrose1071 10 วันที่ผ่านมา +37

      Pats & Genos are like the fast food version of cheesesteaks. Not great quality, but they churn them out a ton. Instead of cooking to order, they just have a bunch of meat already cooked, sitting, waiting to be thrown on a roll. Not even a good role. Solid when drunk at 1am. I’m a Dalessandro's fan, personally.

His mood just seemed off in this vid, even offended for some reason? Big Ollie fan, we all have off days or missed jokes.
      Surely deep fried fish and chips, or a full English, or sausage rolls are better health options though, right?? Cheesesteak is 'treat yourself' food that we all know is unhealthy but delicious. For real. I was born in NYC and in 2018 moved to Philly on a job transfer and loved it. Lived on Fairmount on Pennsylvania Ave. The people are very friendly and like you said, they have good food everywhere. Literally everywhere. I did gain a few pounds. Midway through the pandemic I returned to NYC since I was going to be working remotely for the foreseeable future and my family wanted me back home. I still travel to Philly for work constantly so I do get my fill but the problem is that since the pandemic crime has skyrocketed insanely. In NYC the media exaggerates situations for sensationalism. In Philly, they don’t report it nationally but it’s crazy what is transpiring.

      White American mixed in good, Carmelized Onions (sauté onions in 2 tbsp butter 1 tbsp olive) cook the thinly sliced steak in the same mixture, chopping the the thin steak eventually adding the cheese and folding into the steak so practically every piece is covered in cheese. Get the best torepedo/hoagie/sub roll available, warm that on top of the grill, add the steak, add the carmalized onions, and please for me add good old tomato ketchup, that’s it Cheesesteak, fried onions, ketchup.

    Honestly, to me the hardest thing about finding a good cheesesteak outside of Philly is the roll. Most places use a roll that just doesn't work and is usually too soft on the outside. Now I've run into places in Kansas City and Denver that specifically say they get Amoroso rolls flown in. Those might actually be places that can make a good cheesesteak because they recognize the importance the roll plays in the final product.

I’ve been going through it. American war vet. I don’t know what I would do without mental health coaching. You guys rock in so many ways.

      Hey @cornflake233 mental health and wellbeing is definitely something that you should look into working on. It's an unfortunately overlooked part of healthcare for most of us here in the states. That said, look into a licensed professional therapist in your area. Better Help is not a good substitute for proper mental counseling as it's outsourced, often poorly trained, and it's therapy as a business rather than as a healthcare option (in my experience, not elligible for insurance coverage). Sessions on there are quite impersonal as it's all through their application, and it feels more like just talking to a customer service agent on a website. The advice given was all vague and generic stuff, and the scheduling issues were a nightmare. It's a pretty predatory company and I would HIGHLY advise against using it. Seriously, talk to some fellow soldiers at the VA and find out if any of them have a recommended in-person therapist in the area. You'll thank yourself for it, trust me.

    First, you guys are GREAT, and your videos are very, very well produced. It was very smart to have a small crew of professionals. You have great, likable personalities. I've lived in Philly over 20 years. The bread made for almost every place producing cheesesteaks is superb, fresh and different than you'll find other places. By far my favorite way of getting a steak is with provolone and sautéed peppers and onions.

    British sandwiches - Corination Chicken and mayo, Prawn and Mayo, Egg Cress, BLT, Ham and Cheese, Chicken salad Mayo, Bacon Roll, Bacon and Egg Roll. Then we have our "toasties" which are "melts" - Ham and Cheese Toastie, Cheese and Tomato Toastie... Then we have Subway on every corner which sells "Steak and Cheese sub" which is a basterdised version of this. Finally we have TONNES of boutique little sandwich shops all over London and the UK... I think Josh always puts down British in front of Americans. I feel like you guys need to go to some of the amazing places we have here. You can definitely get food on this level and higher. We are 200 years ahead of cucumber sandwiches...

      When I lived in London from the US, I came to love British sandwich filings from going to Pret a Manger and Marks and Spencers. (Yeah, no criticism I didn't know where to get a "real" sandwich then) You guys have really great fillings that are traditional but long forgotten here. I also came to love a jacket potato with all the toppings, something most Americans don't prefer aside from cheese. People here turn up their noses when I talk about tuna and sweetcorn or baked beans on a potato. Anyway, if I get across the pond again, I plan to eat the British sandwiches I overlooked.

      I can't tell if this is sarcasm or not. I hope it is. Subway is trash first and foremost. Out of your long list of sandwiches the bacon and egg or plain bacon sound the most appealing and even those I wouldn't trade you for our American bacon breakfast sandwiches, let alone the breakfast hoagie. The place they go to, there's like 10 of those type of places within a 10 minute drive of me. I'm talking all making hoagies, Italian, American, Ham &Cheese, Roast Beef, Hot Roast Beef (this can be considered in Philly a class all on it's own like the CHeesesteak), Chicken Parm, Veal Parm, Cheesesteak Hoagie, Pizzasteak, Tuna hoagie, Burgers, grilled chicken, breaded chicken, Hot Sauce chicken finger hoagie, Garlic bread cheesesteak, Calzones, Strombolis and that doesn't even include the pizza. I'm sorry but the sandwiches you mention are child's play. That's the stuff we give seniors in retirement homes.

    "Whiz" can mean a number of things in American English: to move quickly, often with a sound ("the bullet whizzed past my head"), someone who is good or particularly clever at something ("she's a whiz at bookkeeping"), or, yes, to urinate ("I gotta go take a whiz").
    It's just a brand name for a specific kind of processed cheese in the case of cheesesteaks. It's usually sold in a glass jar rather than a spray can.

    I've been waiting for you to come to Philly and try a cheesesteak! Lots of places try to duplicate it but it doesn't even compare! I'm so glad you finally came here to try one! Also, most locals don't go to Pat's or Geno's for a good cheesesteak. There are so many more solid places.

  • @seekexplorewander
    @seekexplorewander 3 วันที่ผ่านมา +1

    There's three key ingredients to a great cheesesteak - the roll, the meat, and the cheese. While that sounds stupid and obvious, as a local tour guide, history buff, and foodie/cook here in Philly, I can tell you even places here, but especially around the world, get this simple sandwich wrong.
    The roll, which we call a hoagie or steak roll in Philly, needs to be super crisp (not like a 5 day old french baguette crisp) to help trap the ingredients, outside, and super soft inside to sop up all of the juices from the meat (and onions if you get them) as well as the melted cheese. Having the wrong roll is what about 49% of places do to make it a bad sandwich.
    The meat needs to be paper thin slices. Here in Philly, most legit places, even the local neighborhood pizza/sandwich shops, used Ribeye steaks that have been frozen, and then cut on a deli slicer, as you would with any cold cut or lunch meat. If it's a good cut of meat and properly sliced thin, you can put it down on the griddle frozen as it will only take a few minutes, I mean 3-4, to get to the right spot. You want the meat perfectly medium. No red/pink, but DEFINITELY not medium well or well done. Some places like Geno's or Steve's Prince of Steaks in Philly will literally leave the slices as the are and some people prefer that. Other places, like Pat's (who invented it in the 1930's) will "chop", or pull the slices about into finer and finer pieces. You don't need it to be mince meat thin, but chopping it up, in my humble opinion, gives it a better mouth feel as you can just bite into the sandwich, chew a few times quickly, and boom, ready for another slice whereas the places that don't chop it up, the pieces of meat can be harder to chew and then you end up chewing on the meat long past when the part of the roll, the onions (or other toppings), in that bite you just took have already made it to your stomach. The meat is what about 49% of places get wrong. Hell, I've even scene celebrity chefs like Gordon Ramsey use "steak" - and leave the pieces of meat so thick that you'd think you were eating a literal steak on a roll. It's disgusting.
    The other key ingredient is the cheese. Liquid Cheese Wiz, American (sliced or in liquid form), and Provolone all work. Specific versions of American - like Cooper Sharp, and Provolone give them a much more sophisticated taste, for a sandwich, as does adding a bit of your favorite toppings - fried onions, fried/warmed pickle slices (not whole damn spears), and/or very finely cut and fried peppers (hot or mild doesn't matter). NEVER put Cheddar, Swiss, or anything else on it for the authentic taste/flavor. US Presidential candidate John Kerry was mocked on local/national media back in 2004 for coming to Philly and trying to order one with Swiss....lol. The cheese is usually only wrong about 2% of the time.
    You can put some ketchup on it. NEVER mustard, never mayo (in my opinion)....and never anything else in terms of condiments. The ketchup, more is okay for kids, should be just enough to help aid in softening up the roll and adding a little bit of acidity and tang to the meat/cheese/onion flavor. You don't drown the damn thing in ketchup once you're 13 or older.
    And if you ever come to Philly, the proper way to order is "# of cheesesteaks in this style", the cheese style, with or without (wit or witout) fried onions, and then if you want to add pickles, peppers, or something that comes next. Some places have condiments and veggies (besides onions) out for you to add at your leisure. If you don't see them, then would end the order with veggies (if you want any) and then you can ask for ketchup (or not) on it.
    So a proper order would sound like "yeah hi, can I get 1 (insert "cheesesteak if the place sells more than that", american, wit, fried pickles (if they have them), ketchup please. Then can I get 1, whiz, witout, light ketchup). Boom, that simple.
