    For British guys - the closest dairy product to kajmak is Cornish or Devonshire clotted cream. The process of making is identical - scooping the clot that is formed on the top by slowly heating the milk in wide vessel. The clot is composed of high percentage of butterfat(cream), lactoalbumin particles (protein), casein( whey/ cheese protein) and moisture. The difference is that Serbian kajmak is savory, preserved by salting and slightly fermented comparing to clotted cream that is more sweet/neutral. Regards from a Food Scientist living in Chicago.

    Kajmak is dificult to explane but its not cheese because its made in completely different way and its not going over the proces of filtration like cheese. Kajmak is the Best thingy from milky 😊😊😊 enjoy when you come next time and visit some swiming centers in city cause every city have it ( lake or river ) you will be delighted.

    There is young Kajmak (or Fresh kajmak) and Aged Kajmak. The aged one has a different taste.

      @@dabbleandtravel And there is also miler. Kajmak is scooped milk fat from boiled milk, miler is scooped milk fat from fresh raw milk. Kajmak is more popular in south Serbia, miler is more popular in Vojvodina. Kisela pavlaka is souer cream, and kiselo mleko is sour milk.

    It's a pity that you missed seeing the great nightlife in Novi Sad because of the corona, we are probably in the top 10 cities of nightlife in all Europe. There is also a large selection of clubs, discos, cafes,pub, and KAFANA 😊. From new commercial, electronic, music 70s and 80s, of course 90s. To Serbian traditional, to enjoy while the tamburica plays right next to your ear. 💃 To enjoy in the view of beautiful girls and handsome guys 😁 But is good sometimes leave something for the next time, to have a reason to come back. 😉

    I am so sad because the weather is not so sunny as it normally is at this time of the year. This is very unusual, it is always 10° warmer than now. Kajmak is salted clotted milk.

    In Serbia pljeskavica is traditionally made from pork meat that is why it is not dry due to the fat, but it could be mixed or just beef/lamb. Especially in parts with Muslim population.

    Next time order from Balkan Express or go there if you are still in Novi Sad, its just under the Petrovaradin Fortress, they have best food ( BBQ stuff ).

    In Serbia, this kind of beans dish is usually eaten as a side with meats, salads, etc or as a main, without meat, if you are fasting for religious reasons. It is absolutely delicious either way.

    I would recomend you to try stuffed chicken brest or thigh in pig net.
    Its chicken meat filled with chease and bacon rolled in pig net.

      The food is so good, that in Novi Sad McDonalds was quite a long time on the verge of bankruptcy, as everyone would choose pljeskavica instead (for almost the same price). They survived with holding kids birthdays, and in summer selling ice cream. But for a city of 350 000 inhabitants there is still only one in town.

    By the way, the dishes you have tried so far: kebabs=ćevapi, burek, sarma, kačamak, kajmak, baklava, ... are originally Turkish, moussaka is Greek, goulash is Hungarian. All these dishes were taken over during the centuries of slavery. The original South Slavic dishes are corn / barley porridge, then nettle and cabbage stews,...

    There is at least 10-20 different types of pies in Serbia (unrelated to stuffing), depending of specific part of Serbia. You may call burek a pie but only as a one specific type of a pie. So, it is not burek everything you can buy with cheese, meat, fruit or any other stuffing. There are only two tipes of burek you can buy in Serbia, traditional Serbian burek (flat pastry) or Bosnian burek (spiral pastry). And if you ask me, Bosnian burek is just another type of a pie, and very good one.

    I have never ever had beans with kaymak, it's so funny to see you guys having it that way. Kaymak is best with cured meat products, or with potatoes, but with heavy dishes like beans - it's a bombshell. :-)

      There is only one McD in Novi Sad, was long on the verge of shutting down as everyone will choose pljeskavica over any burger sold there. There is no KFC in Novi Sad at all (unless it opened the last 1.5 years).

    Kajmak not even closer tho sour cream like savoury clotted cream, when you boil milk in wide pot at the top forming like a cream that is kajmak with solt and time.

    Yes, patty is way better than what you'd get in the typical fast food chains.
    There are no herbs, only salt.

      So...
      17-18 ounces or 1.10 pounds is the big one. It is refereed to as "Elephant's ear" or "Jumbo". Whatever the local fast food shop names it.
      So half a pound is the regular sized patty, paired with either somun or lepinja bread types. Somun's like "pita bread" you had, but sturdier and harder to chew. You had lepinja one in the video I believe, but I'm sorry to say that it looked a bit dry even though it is the softest type. : )
      Normally, for condiments you'd want a bit of cabbage, sweet onions (better if it's spring onion), and maybe some paprika. But there is no strict rule.
      Next time be sure to check Gurmanska pljeskavica or Punjena pljeskavica. It is all healthy meat, organic, and possibly safest you can find in all of Europe bar maybe Spain.
      If you get a chance, check out different types of bacon you can get here in local butcheries that run a family business.
