    Ok... I have a HUGE warning for you and your viewers when it comes to using cinnamon red hots in a recipe. Don't ever buy them at the bulk stores like you did, or the cheap store brands without reading the ingredients. Always get name brand cinnamon red hot candies. Here is the ingredient list from Brach's cinnamon imperials:
    Sugar, Corn Syrup, Artificial and Natural Cinnamon Flavors, Confectioner's Glaze, Modified Corn Starch, Red 40, Red 3, Yellow 6.
    Notice what is missing here that yours had in it? CARNUBA WAX. That right there is a dessert ruiner. You might not have noticed it because of the texture of the walnuts (Or the amount of candies used, only 1 tablespoon), but you melt those candies with the wax in them and add them to your recipes, the wax melts, and then when it cools down to room temp, it congeals into little hard bits of wax. I ruined a massive 11X17 casserole dish of baked apples and pecans this way one time.

    Definition of winning with this recipe: "it's not goo". Also, when you were getting it off of the parchment, I actually thought you said you were going to try a little *crying*, not prying. I just nodded to myself, yup, that's where I'd be.

    Yum! There is a place in WA, Liberty Orchards, that sells these. Theirs are all fruit, no gelatin, you can get them with or without nuts. Very popular store item here during the holidays. I get them almost every year for snacking and gifts. Hello from frozen Corvallis Oregon.

    Your nervousness yet willingness to try anything on camera are some of the things I love most about you. So very genuine and lovable! Gum drops, fruit slices, gummy candies, Jello - all a very hard pass for me so you have my respect for tackling this sticky subject! ;-)

    They sound good although I’d have used Wax paper in the pan & now perhaps a tiny bit of Ground Cinnamon. Your “Dolly” apron looks grand. I’m finding a Wealth of these little books on my Mother’s shelf since her death & am pouring over them trying to read them with my bad eyes looking for new things to make. Thanks for being “fearless” with these recipes, Anna.

    My mom made this. Heavily buttered pan it slides out onto a sugared surface. Mom used wax paper. In remembering this, i would say around 1964

    I wonder if you just used a plain gelatin powder and maybe a few more Red Hots if that would give you a genuine cinnamon flavor. I think the strawberry flavor in the jello is what made these not such Red Hot! Thanks for demonstrating this recipe.

    I kept thinking gumdrops the whole time you were making them so I'm glad you mentioned them at the end. That's some candy cane on your fridge.

    • @cooking_the_books
      @cooking_the_books  ปีที่แล้ว

      Yeah! They were still a bit softer than gumdrops. I picked up the candy cane on super sale years ago. It lights up, but one of the tiny bulbs has burned out so I don't usually turn it on.

    I have to be honest... I've done candy work a few times, and I'm a bit terrified EVERY time. Thank goodness for parchment, right? Well that was an epic journey that certainly seemed worth trying! Even if the texture wasn't bang on for you, so glad you didn't add the sweetened apple sauce... feels like it would have been waaayy too much sugar! Nicely done Anna! Weird they leaned into the cinnamon and not strawberry for their titling, but anyway, on to potato chocolate cake!! You must make! Thanks for this Anna!

      Oh my gosh, this was SO sweet. And VERY strawberry. Just the tiniest hint of cinnamon. Very weird decisions were made in the development of this recipe. 😂

    These are really good. My mom used to use. a certain kind of Gelatin. for these. And she used orange I don't understand. or I don't remember. I should say them being that soft after the first refrigeration Oh, and my mom drained her applesauce.

    I am surprised that these are rolled in granulated sugar rather than powdered

      It is a pretty cute cookbook! I thought they would have been rolled in powdered sugar, too, kind of like the Turkish Delight I've seen in stores.

    I wonder if the "cinnamon candies" should have been more of the 'Brach's cinnamon discs' size, rather than the smaller 'cinnamon dots' size. The discs are also waaaay more cinnamon-y. Just wondering. Did it say which size of gelatin box to use? I am a far bigger fan of cinnamon that strawberry, so I might have used unflavored gelatin and added a couple drops of cinnamon oil.

    I wonder if you used a silicone mini muffin tin or silicone candy mold for the mixture to set in. If that would help with preparing after firming up. I wonder too if you could use sugar free ingredients instead. Thank you for sharing an interesting recipe. Love from Ky 🍏

    • @cooking_the_books
      @cooking_the_books  ปีที่แล้ว

      Hi Tamson! A silicone pan would probably work pretty well. My worry with using a sugar substitute is that the process in this particular recipe relies on the structure of the cooked sugar in order to form the right consistency. Might be worth a try though just to see!
