A have alot of family from hurley and silver city. And also had a family member from cuchillo but she also passed. But this sopaipillas we call them stuffed empanadas or empanaditas. But they do look good.

Stuffed Sopapillas don't look like this... that is a Hand Pie...Empanadas... Stuffed Sopapillas .. do not have an edge on them... but this is a great video...
Thats a different stuffed sopapilla... i miss the way my mom made em. A giant round flaky sopapilla that when u start to stuff it, the top would collapse and the juices would just absorb into the sopapilla omg 😢
This brings back great memories of my time in Alamogordo, NM. There was a restaurant there called Peka's. It was in a former lumberyard building by the railroad downtown. They had stuffed sopapillas on the menu. Thanks for sharing the recipe, your techniques and also the story. Our family has always gathered around good simple food. My children and now grandchildren appreciate our food traditions, as well. Thanks again.
Those are not sopapillas. Those are meat pies. Yes....there is a difference. I will stick with the stuffed sopapillas my Grandmother taught me to make in Albuquerque.
@@JudiChristopher I tried to include the link to the recipe but the message was apparently deleted. The closest recipe to the way I make sopapillas is Muy Bueno sopapilla recipe. Have whatever meat, beans, veggies, & cheese ready for stuffing before cooking the sopapillas. Important to roll the dough thick so they puff up nice. I got 2 free 18 inch long paint sticks from home depot, placed those far enough apart to fit dough in the middle and roll to an even thickness. Then cut dough to size you want, fry, stuff, and enjoy!

YOU are so smart to get the Long Paint Sticks... which is so funny, I am painting the outside of my house and asked for paint stick (the normal size) and the guy gave me the BIG ones you're talking about... I'm sure it's because I had been buying so much paint... believe me... I deserved those Paint Sticks... Now I will save 2 back and use your trick... So smart... Question: (I hope this doesn't sound stupid) Do you FRY the Sopapillas first then Cut them open and put the meat and vegetables in them or do you put the stuffing in first and then fry them??? @@JudiChristopher Great! Paint away! Love to paint!!! Houses that is...... inside & out!! Answer: fry first, cut open on top, then stuff! I'm hungry already! Test fry one piece of dough as long as your index finger & wide as thumb. Place it in hot oil. It will sink then come up to top.....at the time if no bubble (or puffing of dough) forming on the sopapilla then safely swish (brain can't think of better word) oil on top of dough and keep doing until sopapilla puffs. If it doesn't puff either dough needs to be a little thinner or oil needs to be a little hotter. Once it has puffed up and edges are slightly brown then flip and cook about a minute or less.... cook two or three at a time and carefully swish as needed! Save a few un-stuffed to eat with honey!! Good luck! Best wishes!!Never give up! Never surrender!

I am going through some painful times... just lost my Mama 4 months ago... and NOW... 2 of the step-brothers are suing me (long story)... sometimes when a family member dies... it sure can bring out the UGLY in people... Painting this BIG ... Very Tall House and it is Stucco on top of that... is very daunting ... Thank you for the encouraging words... Yes.. I agree... One must have Honey with Sopapillas... We call them meat pies 🥧 in Oklahoma. They are delicious.
