Only standard fact I can tell is any course at IISc makes you aware of all the necessary expected knowledge and you get the best people in that field to teach.
CDS and CSA are dept. Out of the two MTech CSA is preferred. MTech AI is a dedicated AI course in which you learn from multiple departments including CSA and CDS. If you are sure that you want to restrict only to AI then it's the best.
All companies come if they want to hire in that year. Companies specify the eligibility criteria of candidates. Some companies may be interested only in hiring from particular course.
