    3/8 oz Vanilla Syrup
    1 oz Lime Juice
    1 Dash Hellfire Shrub

    I think Smith & Cross is goin to be my favourite for this super gorgeous cocktail! Tonight I have a terrific Irish Whisky classic cocktail on the menu for my husband and I for St. Patrick's Day but tomorrow this beauty that you have made is going to be our weekend choice for a fabulous and super delicious powerful cocktail! I can't wait! 🙂From one super smart woman to another, Riley, you rocked this and of course you usually do! It's great to see these rums compared. I love how our palettes develop over time! I just recently had a chance to finally try Dr. Bird and I really want to see what it's like in this beauty! They are all terrific but I think I have to go with Smith & Cross as my choice for this cocktail! But of course until I try each rum I won't know for sure right?! Great video! I learned so much! Super interesting rums to profile Carl and Riley!! Love that funk!! Each rum has a lot to offer. Hey I wonder what choice Ann will make?! She loves Dr. Bird as I recall! I want to try all of these and Javier makes great points about using Dr. Bird! Cheers you two!! Love your videos!! They are so entertaining and fun and I learn a lot and that's so awesome!!       We are both working a lot of hours this weekend. Hotel bar is going to be busy bands today and tomorrow. So probably nothing to special . LOL Maybe an Irish Old Fashioned.

    Fun video! I am a jamaican rum fanatic and especially love pot still jamaicans. If you don't have it or haven't tried it, Id recommend getting Plantation Xaymaca, Hampden 8yr (def on the pricey side), and Worthy Park 109. All great additions to what you have now.

      @@CinHotlanta it’s honestly one of my favorite single bottles. I can sip it neat, old fashioned, Mai Tai, other cocktails. Just wish it wasn’t so pricey.

    Ok, speaking straight to my heart here! I'd say you have three very, very different profiles here. Dark, and gold. All very good rums. That Dr. Bird is my very favorite rum. That muscatel cask really comes through for sure. It's a different kind of funk, not a banana funk or carmely, very fruity from that cask! Cinnamon syrup and Dr. Bird are made for each other. I agree with Riley, Dr is not a great starter rum. These rum's though, all very nice and great in different ways. Can't go wrong with a Hamiltons or the Smith & Cross though. Funny, on my last live, Vino said that I (me) didn't think S & C is very funky. And everyone else does. I have some rums that put S & C to shame with Hogo. But I still love it. I would go Dr. Bird first, S & C second and pull that oz's back a bit. PS. Have you tried the Hendricks Flora Adora Yet. I just ordered 2 bottles because Oregon doesn't have it at all!

    Love me some Hamilton JPSB! Smith & Cross is delicious as well. I don't think I've ever come across Doctor Bird here in NYC. It doesn't even show up on Drizly when I look to see if anyone can deliver it to me. Maybe they don't distribute here? Regardless, it's on my to-buy list for sure. Cheers guys!

    Carl should have said "you have 2 correct" after the daiquiri tasting 🙂 I just found your channel and am now browsing through the videos, looks promising. What I wouldn't give to get the Doctor Bird or Hamilton rums here in Europe. Greetings from Finland!

    Great video! I have the Hamilton and Smith and Cross, haven't had Dr. Bird yet. If you come across Plantation Xaymaca, you should give that a try. Not as big and bold as the ones you have, but delicious and flavor profile much more accessible for a lot of people. Great in a Mai Tai!

      We love the tobacco notes in the Xaymaca! He made a smoked daiquiri with it and called it a Humidor Daiquiri.

    Love 'em. Just picked up a Worthy Park single Estate Jamaican Pots still rum. Such creamy molasses and thick oily feel on the mouth. So good.

    Cheers! You two should check out a Siboney from the Easy Tiki book, if you haven't already. So good. It shares a few ingredients from this drink and I can see the other rum needed between you both.
    Siboney
    1.5 oz Aged Jamaican rum (preferably Dr. Bird)
    0.5 oz Plantation Stiggins' Fancy pineapple rum
    1.0 oz Pineapple juice
    .75 oz Lime juice
    0.5 oz Passion fruit syrup
    0.5 oz Rich Demerara syrup
    Add ice, shake for 10, strain to coupe.

      I panicked on my comment... My wife was coming down the steps and I thought we were leaving for a day of disorderly drinking, but she just wanted to give me an update... I love Doctor Bird and Smith and Cross... Was thinking about batching this up for a party tonight, but I don't want to waste either on any deadbeats that might be there... Maybe we'll mix it up when we get home or just have it tomorrow.

    Wish I could get my hands on some Dr. Bird! Did you have to order it?
    I made a S&C daiquiri a while back and used Gnome's hibiscus syrup as the sweetener...It was awesome! Hmmm...I want one of those now, or one of these passion fruit daiquiris.

    You’re all doing a disservice to the rum lifestyle.
    BUT, Doctor Bird is glorious.
    It’s like Smith & Cross in that it’s a fancy, overproof, lightly aged Jamaican rum.
    But it’s a very different flavor profile, with more mango, dessert flavors, and a bit of floral.
    It makes the best Jamaican Dark n Stormy.
    I’d keep both on my bar shelf, for different reasons.

      We appreciate your feedback. It was our first time trying Jungle Bird so our pallet was not a refined as yours is today.
      But hey we are trying to always be better

    Why does everyone describe banana smell as being “funky”? I don’t get it. Bananas smell wonderful

      I believe the funky smell is wonderful too. Maybe more like ripe bananas?
