I have been making sausage following the traditions of the people of my homeland but as an Immigrant Texan I have experienced and enjoyed the flavors of Texas & Mexico for quite some time now. Chile relleno happens to be one of my favorite dishes and this video gives me the incentive to try this also. Joe, it is people like you that inspire the rest of us to expand our cuisine.

Joe, Thanks for the recipe and the video. I Made 30lbs this weekend and wow! That is a great sausage. Made a few minor modifications. I used brisket, and beer instead of water, and had to add some extra cheese as I couldn’t source Chihuahua locally in any form except shredded which didn’t hold up well, so I added some high temp pepper jack before stuffing. Love the channel Double. Thumbs up on the Chili relleno Sausage.
Nice Michael. The Chihuahua cheese is like a cross of a sharp Cheddar and mozzarella. Using the pepper jack was a smart move as it too has a similar flavor. Thanks for watching 👍

I grew up in Las Cruces N.M. I’ve had my share of Chile Relleno made with Hatch Chile! I now live on the east coast and go back to visit family ever so often to get my “Chile Fix”. This recipe has activated my taste buds! I will have this on my to do list! Cheers!
I was in LA a year and a half ago, and when I got into town it was around 6pm. I asked a hotel worker where a decent place to catch some dinner was. He asked me if I had ever had "Relleno", and I was like.. never heard of it (lol). He strongly suggested a local restaurant and to order that. I did and wow... I've ordered Relleno "every" time I've gone to any Mexican restaurant since then. Absolutely one of my favorites. Excellent video.

These guys are awesome. I had to use Oaxaca cheese, but everything else was matching to your recipe. I did this thing for dinner. A few weeks back, I had made Chili Relleño sausage. I had smoked then froze it. Tonight, I decided to have a fridge clean. So I used up extra cheese, refried beans and tortillas and made wraps. I put a bit of water in a covered skillet on a low/med heat. Doing so steams the links, then as water evaporates creates a juice and they fry up in it. After they came to temp, I lefted covered and set off to the side. In cast iron skillet, I placed grated Oaxaca cheese and allowed one side to brown. Then rolling the link up in a cheese blanket. On the warmed tortillas, I placed refried beans. Ending with a wrap of sorts and served up with blie corn chips and green chili salsa. It was amazing!
