Do you list the amounts of ginger, sugar and any other ingredient measurements? Perhaps I missed this. I did hear 2 pounds plus 2 lemons but no other amounts. Thank you

I too was just given gorgeous lemons from a friend. I'd LOVE to do a "JAM" versus Marmalade for my husband who won't enjoy the large slices. I wonder.........what would you do to change the amounts of fruit if anything? Thanks so much, I genuinely appreciate the advice.

Does the end product tastes a little bitter? - I'm asking because I usually switch the boiling water for new water before adding the sugar. By doing this I get rid of the bitter taste of the peel white pit.
I agree. If I may suggest J B, literally put fresh water boil just the skin that you've peeled off the lemons and julienned (discarding as much of the pith or the white )Do so for 10 mn and discard the water. Repeat 2 more times then cook according to the recipe and the bitterness will be gone while the flavor will still be strong.

hHw much water? How much sugar? How long do you cook before adding sugar? Really if you're going to give a recipe stick to the basics!

You're title said you were making Lemon Marmalade so you throw in ginger as well. Change the title. I wasted my time when I heard ginger.
