How to make Creme Brulee - Crème Brûlée Recipe

  • You can hardly beat a classic Crème Brûlée during the summer. It’s creamy, elegant, refreshing and the crispy caramelized crust on top is simply divine.

    Ingredients
    Makes 4 servings
    6 egg yolks, room temperature
    1/2 cup (100g) sugar
    1 1/2 tsp (7g) vanilla extract
    2 cups (500g) whipping cream (35% fat)
    4 tbsp (60g) sugar, for caramelizing the top
    1. Preheat oven to 300F (150C).
    2. In a medium bowl, whisk together the egg yolks with sugar and vanilla until thick, creamy and pale yellow colored.
    3. Place the cream into a saucepan and heat until just begins to boil at the edges. Pour little at a time over egg yolks mixture while stirring continuously.
    4. Place 4 (8oz-220g) ramekins into a larger pan. For easier pouring transfer the mixture into a pitcher. Pour the mixture evenly into the ramekins. Place on the even rack and pour hot water into the pan until halfway up the sides of the ramekins.
    5. Bake for about 30-35 minutes until set and trembling into the center.
    6. Remove the ramekins from the hot water and let cool at room temperature. Refrigerate for at least 2 hours or overnight.
    7. Before serving spread 1 tbsp (15g) sugar on top of each ramekin. Use a torch to melt the sugar and create a crispy crust.
    8. Let it set for about 5 minutes before serving.

    if you dont have a blowtorch:
    pour some sugar (the amount depends on the size of the ramekin. try a tablespoon first) into a nonstick pan and heat it up until the sugar starts to caramelize. always mix it, dont let it burn. once it looks like caramel or has a nice golden brown color, pour it on the creme brûlée. wait for it to chill, then eat. hope this helped someone!

      Actually this is the way i prefer my creme brûlée, because i) the more caramel the better and ii) a thicker caramel layer is more disolve-resistant and can even survive overnight ^^

    This is by far the best recipe. I have been using it now for about 2 years. Some little tweaks that I can recommend is only use pure vanilla extract. Not the imitation stuff. I also bring the cream more of a boil before mixing with the eggs. That and bake it for about 40 minutes. At 30-35 minutes it turned out to be a little too runny. 40 minutes it sets really well and thicker. This is my family’s favorite dessert. Thank you

      with the time it really depends on the size of your ramekins, to know the time you just need to recognize when the custard is set, which is something most recipes dont explain very well :/

      How is it supposed to look when it's set? I did a batch and it was still liquidy after 30 minutes.

      Yeah so satisfying to break through too! I made creme brûlée on my new channel a few weeks ago too! And I caramelised the tops using just a spoon! Hard to believe I know but it works fantastically 😊

    This was absolutely perfect! I followed every instruction and it was scrumptious. The flavors weren’t too overwhelming. It just melted in my mouth. Don’t forget to sift before you pour into your ramekins for a smooth texture and a pretty turnout. I used toothpicks to pop every bubble. Side note: it may be too sweet for those who don’t really like too much sweetness. I added strawberries and blueberries with a scoop of ice cream on the side.

      aaron Chung perhaps it wasn’t baked long enough? Can’t be sure. I’ve made it multiple times now and no problems. Did you make sure your eggs were room temperature? I did it exactly as the video. After baking (w/ water bath) my edges were firm and it was slightly jiggly in the middle when tapping the pan. I then had them cool on a rack and once cooled placed in the fridge covered in cling wrap (try not to have it touch the top cause it pulls the top layer. Doesn’t change anything it just looked so pretty and smooth) until I’m ready to eat.

      I realized that creme brulee is delicate, if you have a ramekin that is 2 inch deep and do the same procedure, it will yield different result I had to monitor it for 35 to 40 minutes or adjust the temp to 400F to make sure the mixture if it is fully set

    This is a great recipe just tried it yesterday! Texture, crunch and creaminess is absolutely divine 😍
    However, it turned out too sweet for my liking, half cup of sugar is a lot when there is already going to be a sugar crunch on top ! I would recommend to use 1/4 cup instead 👌🏼

    I made this cream brulee more than 3 times already and they are perfect. The only difference is that mine toke longer bake it toke around 45 min to an hour .I think everyone should experiment with their oven to know the proper baking time☺

    It's amazing that a dessert this simple could be so exquisite. The techniques seen in this video should be followed exactly. It is not shown in this video, but after cooling the custard counter top it should be refrigerated until firm. If you don't have a torch you can put the ramekins under the broiler. But they must be watched constantly. It is also IMPERATIVE that the ramekins be broiler-proof. This is a great dessert when having a dinner party because it can be made a day or two in advance. However, the custards must be sprinkled with sugar and caramelized just before serving.

    Turned out delicious, my only learning tidbit i learned myself while following this recipe was to not overwhisk the creme while ure making it...i over whisked to the point of foaminesss and it made the top not as smooth. However it still turned out delicious and creamy on the bottom, i used about 30 minutes of cooking time on my 8 oz deep set remekins also for anyone who wants to know that used something similiar. I checked it by making sure the center still jiggled and it worked very smooth when we ate it. Also other tadbit, some people were saying it was too sweet with the amount of sugar in the recipe but i disagree it was just right! And definitely not unedible like some were claiming! Awesome recipe!

    That's the classic recipe ages now. Easy and tasty. Most common mistake, overheating of milk cream. don't let the cream come to a boil. I think that this is the most important part. Correct me if I'm wrong. Thank you for sharing your video recipe.

    Bowl
    -6 egg yolks
    -1/2 cup sugar
    -1 1/2 teaspoon of vanilla extract
    *Whisk till thick
    Heating pot
    -2 cups whipping cream
    *Heat until tiny bubbles form on rim of cream(until begins to boil in other words)
    *Add to custard, stir in little at a time, don’t allow eggs in mixture to cook
    *Poor mix into 4 ramikens equally
    *Cook in water bath 300 Fahrenheit 30-35 minutes
    *let rest for at least 2 hours-overnight
    Sugar methods
    Option A: Sprinkle layer of sugar on top of cooled creme brulee and melt gently with a blow torch until amber brown
    Option B: In a pot, pour in same amount of sugar or more and melt over high heat. Stir continuously till amber brown, then pour on top, rest, and serve. *OR* Use wet method and pour sugar into pot with a quarter the amount of water, stir before heating and DO NOT STIR after the heat is turned on. If you do, splashes of unmelted sugar with stick to sides and make caramel clumpy. If this happens, pour in water, stir slowly till all is melted and continue. Now, pour on top when amber color, leave to set, and serve
    Option C: Sprinkle layer of sugar on top, grab a metal spoon and gently heat underside of spoon over candle flame and then place heated underside of spoon on the sugar, leave for few seconds(I haven’t tried this myself, only heard it works), and repeat till appropriate shell is layered(at your preference). Leave for a second and serve.

    jus a tip for if uu don't have a blow torch uu can boil hot water ,, dip uur spoon in there fo a while nn' when uu think it's hot take it out nn' put it on the sugar nn' it works perfectly ,, good luckk🙃👍🏽 !

    Made this for my family, reduced the sugar by half to 50g, I don’t have a blow torch so I cooked caramel and poured it on top for it to set. tasted AMAZING.

      Hi, do you mind telling me the ramekins you bought? I see some comments saying theirs was slightly taller than the ones used in the video so it was undercooked. Or just tell me the dimensions that is okay too! Thanks :D

      Mine are the classic one that are 6-8 oz! I think if you look up ramekins on amazon it's like the top 3 results (3.5-4 inches in diameter)! also I've made this recipe like 4 times now and if it jiggles just in the middle it doesn't mean it's undercooked, it'll set after it cools down in the fridge so it'll be less runny than you'd expect! If it doesn't jiggle at all out of the oven then it actually might be overdone! Good luck!!

      @@AdrianCuyubambaDiaz They turned out wonderfully! If you try making it, make sure not to cook the cream too much or else it’ll curdle and it’ll cook the eggs. It happened once out of my five maybe even six batches

      You can also use the grill option in your oven, I personally find that easier than torching

      Bake until just set.
      Shake the mold, it will jiggle when done, like jello

    This recipe is soooo good I tried it today and this is my 2nd time making something sweet and this was so easy and delicious
    Note: Do not use the normal kitchen lighter cuz it smells and tastes bad and it's unhealthy so I ate it without the sugar topping, incredible btw

      You can heat up a spoon on the stove then put it on the sugar and it will caramelize instantly

      Mine didn't either..it was very loose and did not firm up in the refrigerator. Wondering if there's even a way to salvage this batch.. >Edit: Taking a second look at the video, I'm thinking 30-35 minutes in the oven wasn't long enough; it looks pretty firm coming out of the oven in the video!

      Julius Roh That's probably accurate. I've used roughly the same measurements before and I need to bake it for about 50 minutes at 325 to get anywhere close to where it needs to be before refrigerating. Keep in mind, though, it does firm up a lot if you chill it overnight. When removing it from the oven, the sides should be set but the center should have a slight jiggle.

      Wrong temperature- you need to let it sit. Cant go above 82 degrees when you mix all ingredients together, or else egg curdles. Let it sit for longer and cool down- before oven.

      i make creme brulee every week. it's my favorite sweet. To set the creme brulee you have to boil the cream 80-85 degrees and to pour little portion of cream to the eggs with sugar and vanilla at a time. After when you put it in the oven you put the temperature 110 degrees for 30 to 35 minutes. After when the 30 minutes pass you touch on top of the creme brulee to see if it makes a skin. if it doesn't put 5 more minutes in 120 degrees. I guarantee you a succesfull creme brulee.
