Homemade Beef Hotdogs - Grinding, Seasoning, Stuffing, and Smoking!

  • Welcome to the Mothership! Today I decided I really wanted a hot dog. But I didn't want some garbage store bought dog, so I went and found a primal rib cut, and used that to make my very own all beef hot dogs. Is this cut of beef overkill? absolutely! But these dogs are perfect! If you are interested in making your own dogs, look no further, Ill show you from start to finish how to do it! Sound good? Lets get started....
    Ingredients:
    Beef - Chuck Roast is ideal, but use any cut you want! Looking for around 80/20 ratio
    1.75% Salt

    .2% White Pepper
    .15% Mustard Powder
    .15% Onion Powder

    I was worried the food processor would heat the rib roast too much, but seems to have done the job. Great looking dogs, one thing Ive always figured the juice wasnt worth the squeeze, but you made it look easy! Great video!

      I used a ton of ice to keep it cold enough to emulsify, but I was surprised how well it works. Definitely can do emulsified sausages with a regular food processor

      It’s the usually annoying amount of work like all sausages, but definitely not overly tough. And I have to say, I’m not usually a big hot dog guy, but I’ve been loving these.

      Honestly I filmed all of it but felt it was too boring to put into the video. It’s simple, and those fiber casings are pretty tough to rip. So just fill up a hotdog length. Cut it. Tie both sides. And move on to the next
