    I enjoy your videos. They are direct and no-nonsense. Thanks. I am making the old fashion hot dogs today. Could you explain why your first grind is usually a find grind, and you second grind a medium. I would have thought that would be the other way around.

    First grind is fine the the first time because it will get rid of any bone chips you may have in the meat if you notice any sinew and or bone chips will get stuck behind the plate and wrap around knife of the grinder
    If you would like to go two medium grinds or medium and a coarse you could.Just clean up the meat better.On most the sausage that I make I like the texture of the fine and medium.

    What size/ kind of casings?

      I use a hog casing 28 to 30 that will give you about a quarter pound link if you would like to go to a traditional smaller size use lamb 24 to 26

    Is dried milk and milk powder the same thing, or substitutes for each other?

    Can i dunk them in warm/hot water at the end....and if so, how long submersion?

    what about celery Powder 506 instead of Instacure?

      Celery powder works I have used it but after I researched it The only difference is dried celery powder is A natural accruing nitrate and less consistent then instacure and the effects on your body would be the same but from what I have read the little bit of nitrates that you use is not harmful but it depends on what you read And where you get it from
