You did not show removal of the races. Tapping them out with a drift punch working side to side. Also, a bearing packer will ensure that the bearings are properly packed. The castle nut needs to be secured with Channel Locks until seated and backed off to one hole for cotter pin insertion. Finger tightening may be assumed and this will not seat the bearing properly. Why didn't show the removal of the races?? You made it look like an easy removal.

you didn't pack your bearings correctly
I was shown to liberally put grease in the palm and rub both sides of the bearings into the palm of grease. Is that what you mean?
