I think this would be good if they used the cauliflower rice.😚 Cauliflower rice is so good when it's sauteed in the skillet with the onion. I also think this dish would be good as a Mexican style meal.😋 Just adding your taco seasoning and Mexican cheese! It would be like a Spanish chicken and rice!☺️ Your recipes are so wonderful and you give us so many great ideas for easy incredible meals!😁 Thanks for sharing another great recipe!🥰
I absolutely love all of your casserole recipes. I'm a baby boomer and my mother worked full time. I grew up on casseroles because they were quick for her to put together and she could have my sister and I do the chopping, grating,etc. when we got home from school. I have made several of your casserole recipes along with some of my own. My husband had a ,stay-at-home mother so not many casseroles. He now loves casseroles

I've never tried this recipe with wild rice, and yes, you can sub half & half it just won't be as creamy.
