Riding in a halter like this is fine for a finished horse, but she is not there yet. When I transition my horses from a bitted bridle to bitless, I always start with a sidepull. They make it easy to transition rein cues that they are familiar with, and provides you with better control.
Lots of interesting comments re bitless bridles. My thoughts are that this is not a bitless bridle. It's just a training head collar. The pressure on the nose is in the wrong place and without reins attached on either side, you are asking too much of her. She certainly changed her demeanor right back to her Spanish roots.
This could have ended badly! She's confused and nervous by the tack change. Just when you finally got her to walk on a loose rein, too. I'm not sure your purpose of doing this. If you're serious, invest in a good bitless bridle with more control, either a sidepull or one with poll pressure.

I used to use my regular halter with reins clipped to each side but only in the yard or the paddock. She did surprisingly well but we were in a controlled setting and I was bareback riding. Just walking around and grazing. We needed more precise steering to go out hacking though.
Yea, I ride my horse with a bit a neck strap inside the ring of course and bit less only after he got used to the feel of it.I added fleece to make him more comfortable around the nose. It's a new feeling and can be done, but takes a little time, leading, lunging and riding. I am not a complete bit less rider, my horse is a thoroughbred off the track yet. So he can pull through a lot of nose bands, Hackamore etc. I am best with the bit he was used to running with. I firmly believe as many people do that bits do not harm a horses mouth if we use them correctly! I steer with a left to right slight turn to stop him in all I wear on his face. If his mouth is open while I am riding with a bit, I use a softer hand. She will adjust slowly if you want to go bit less.
Am besten nimmst du am Anfang beides und probierst es aus .Du hast dann zwar 2 paar Zügel, aber das funktioniert meistens ganz gut. Für sie wird es dann einfacher, es zu akzeptieren.

It’s like she was confused and thought you were trying to tell her to go backwards with your hands but forward with your legs.
Some people put the bit on and as they ride they loosen it up and the control goes to the rain.
It's nice to see some horses bit less.

Hi...please look up Nalanta bitless bridle it uses a special 2 ring system that makes it easy for the horse understand...please don't give up

Perhaps a nice padded hackamore bridle instead of a thin rope halter? Would spread out the nose pressure a bit.

Have you tried doing circles with her when she gets worried, you'd get that forward motion.
I think she will learn and accept bitless
