You don't have to pry the plastic up to remove the seat. With the bolt undone, you simply push the back seat towards the window, and it pops right out.

We did this on 2004 EP3, and we wound up putting it back in. That weight centered the weight distribution. The car is my wife's daily driver, she is petite 105 soaking wet. She drives it like she stole it and has had the car since new. She complained that removing the seat made it unpredictable. So remove at your own risk. It is not a race car, this is a really quick grocery getter that encourages taking the long way home.
