I love how you alternate more advanced, unique dishes and tastes like this with something like fried chicken. I can be adventurous or I can just use common ingredients in new ways. Foodwishes for life.
We have a great cheese shop in the area and a neighbor who has an amazing fig tree so this looks like a dish which will definitely be tried here. Bravo!
I live between Philadelphia and Trenton, Nj. I have 2 fig tree's that are doing unbelievably GREAT this year.These plants last fall were 4-5' tall and were growing very slow. I planted these to baby fig plants when they were a foot high. Every year up to now has been an up and down experience. This past fall I decided to tie them tight together then wrap the 2 bushes in burlap . Then I put a thick level of mulch around the root system to prevent hard frost from effecting them. Well, I don't know if what I did ,did the trick,or the fact we had a very mild winter (2019) or both cuz I went from pulling whatever ripe figs I could get from these 2 plants,and eat them as they ripened. I always kept up with eating them vs riped figs. Well..... this year the plants are 7-8 ft. tall and 7' in diameter. I am going to have soooooooo many figs from just these 2 bushes/small tree's I hope I don't waste one cuz they are sooooo tasty. I do have a problem though. ANTS ! 🐜 So........I bought 2 big jars of Vaseline and put it around the base of each vertical trunk/limb. It works 100%. No moe ants ! ANYWAY..... FIGS RULE !
i tried bruschetta for the first time today. it was amazing. and it was a costco free sample. needless to say. i bought a jar of the tomatoes and a pack of mozzarella cheese. is it bad that i bought it at costco? IT WAS SUPER DELICOUS.
This reminds me of my first encounter with figs. As a child, my friends and I would ride around our neighboorhood on our banana seat bicycles just being kids, but ever so often we would get lucky and stop by some of the neighboors houses and pick their fruit, oranges, plums ect. Back before convient stores became trendy. Anways one day in a shanty alley we fell across a tree with the most greatest fruit. It was fiberous, juicy, with a hint of sweet. Later in my life I found out it was the fig...
@foodwishes, Hey Chef JOHN! , i just wanna say thank you for posting videos. i have sure learnt alot thanks to you =) the supermarket in my area sells beef fillet, sirlion, e.t.c but the are really thin. i only know how to sear thick ones but once i get to thin ones it become dry and overcooked =( please help
Burrata is basically fresh mozzarella and creme. It's delicious. BelGioioso actually makes it, so you may find it in your supermarket if they carry a full line of their products.
omg, this looks sooo delicious! Just to let you know, I just got back from a trip to Italy and had to learn that it´s not pronounced bruschetta but brusketta wich means without the sch- sound. :)
I really love a grilled fig. They pair so nicely with cheese... I really like goat or blue cheese but in very small amounts. The burrata looks delicious. Only problem is you can't find good figs up here in Ontario. They're either bland and unripe or over ripe and off. When I find good figs I'll try this dish asap.

Okay, I LOVE you Chef John. Even though I "think" I know a lot about food you always teach me something. Never heard of Burrata before. Can't wait to try it. Just one small thing... Squirting sauces on plates from squirt bottles drives me nuts. It feels so pretentious. Of course, you are classically trained and I am not, so you know what you are talking about, I don't. Just ... I'm not gonna' buy squirt bottles, just not, although I do want a pretty plate.
