    AHH the dear,dear ,little Asian clam,eat these fresh water bad boys before they take over the world,obviously don't pick them by a power station outlet which they love,and make sure you purge them cause they like a muddy dwelling,but apart from that, get them in the pan,as they breed like wild fire,they will release 100,000 juveniles in a lifetime,so,your helping the cause ,hope this helps cheers.Scott.

    I leave mine overnight in fresh water with a crushed wheetabix in the bucket so they eat that and expell the sand

    I read a lot. I've seen cockles mentioned in quite a few books and always wondered what they were. I live in Philadelphia, Pennsylvania in the US. Here we eat clams(various types) and mussels and oysters and that's about it. You made those seem so tasty that I want to jump on a plane and head on over to Wales to get an authentic dish of Cockles!

    I always use sea rock salt. No bleached salt with additives. It really tastes like the sea and it's so cheap to buy a bag and put in a grinder. Don't use iodised salt with anti-caking agents with e numbers. Actually you should Google the e number on your bleached salt and won't ever eat it again! Great show Scott.

    So for cockles it's the opposite, where you discard those that have opened rather than those that are closed? I thought for shellfish you just throw out those that don't open.

      After purging (the over night in salt water thing) I’d they open wide and don’t close, Chuck them, then AFTER cooking if they don’t open up chuck Those ones. Is basically two rounds of checks

    I always leave mine in a sink of fresh water, so they sieve out any sand or grit for about an hour before cooking, i live in Blackpool, so they are always here, fresh water does them no harm as they are under beach sand or in open flowing gullies that's always rained on, a few years ago, Gordon Ramsey served 6 Morcambe cockles for £20, this is just up the road :) I get a large bucket full in under an hour off the beach with a good rake.

    • @DaleHodgkins0n
      @DaleHodgkins0n 7 ปีที่แล้ว +1

      It's their shells that are open - not their mouths (cockles don't have mouths as such....) anyway - you have to throw away the dead ones or else they'll poison you if you try and eat them. And anyone who has had food-poisoning off shell fish knows about it.....😲

    • @Theremedialgash
      @Theremedialgash 4 ปีที่แล้ว +1

      @@andrewjones-productions arguably they are not dead but very much alive - like mussels, give them a tap and if they don't close at that point then discard. I think Scott was just giving a 'fool-proof' method.

    Enjoyed your video. Live in South Wales. Not New South Wales Australia. Great taste, even raw. I'm. 56 now and my old man used to do exactly the same as you did, (soaking them over night) the only difference is that he used to break bread into the water, and after washing them and then cooking there was always bread in the shells in the morning , as if they had been feeding and the cockles seemed a lot bigger. By the way its pronounced PENCLOUD. Thanks for taking the time to make the video

    Thank you Scott, I live in China and there are a number of small shell variety shell fish that can be purchased fresh in any early morning market. The Chinese prefer natural shell fish or not with wine sauces or in your case cider, their belief is that it comes from water so can only be cooked in water or steamed, but they haven't got the sand part right yet. I shall be off to the morning market tomorrow and he he I have found some delicious New Zealand wine that will go a treat with shell fish. Cheers.
