After doing some looking around and comparing, the best I can tell, its a Kurosaki Shizuku sujihiki with a hammered finish, not sure of the metal but probably R2.
I don't wish to rain on anyone's parade but, What's wrong with these "executive" chefs that don't seem to practice great hygiene and pride in their professional appearance? Some look as if they never run a clean comb through their hair or that their faces have never felt the sharp side of a razor. If you insist on the disheveled and unkempt look as part of your "artistic mystique" at least wear a hair net or face guard. Disgusting appearance is akin to a taking food out of a dirty refrigerator or improper food handling techniques. You can be a cook and an artist too, but clean your brushes and deliver what I pay for on the plate.

You tried to made a clever snide remark, who is being the troll here? As to being Scrooge, I honor the holidays in restaurants across the world and over tip heavily because I am being served by people who give up their holiday to make mine more pleasurable. The total point of this video is about good service, good food and luxury. This chef in letting his hair down is letting his establishment and his clientele down in some perception of elite artistry. We lead by example, not by exception.
